  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon salt

  • 2 tablespoons milk or up to 4 if needed

Directions:

PREHEAT oven to 350° F.

FOR COOKIES:
COMBINE
brown sugar, 3/4 cup butter and water in large, heavy-duty saucepan. Cook over medium heat, stirring occasionally, for 3 to 4 minutes or until butter is melted. Add morsels; cook, stirring constantly, for 1 to 2 minutes or until smooth. Remove from heat. Add eggs one at a time, beating well after each addition. Stir in flour, baking soda and salt. powdered sugar, 1/3 cup butter and vanilla extract in large mixer bowl. Add milk until smooth and of desired spreading consistency.

SPREAD about 2 teaspoons filling onto flat-side of 1 cookie; top with second cookie, flat-side down. Squeeze together gently. Repeat with remaining cookies.

SUBSTITUTE
1/8 teaspoon peppermint or mint extract for vanilla extract in filling.

    BAPTISM COOKIES

    KIM SLICHER from BALTIMORE, MD

I made these great cookies for my son and niece's baptism party. The only change I made was using pink food coloring for half the filling and blue food coloring for the other half, so we had cookies representing each child. They were one of the first treats to get finished. Easy and fun to make.

Instead of melting the chocolate directly on the stove, I put a pot inside another pot full of boiling water on the stove. That way the chocolate won't burn!
