Costa Rican-Style Eggnog

Ingredients

3 large egg yolks
1/2 cup granulated sugar
2 cans (12 fl. oz. each) NESTLÉ® CARNATION® Evaporated Milk
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
3 whole cloves
1/2 cup rum or 1 tablespoon rum extract

 

Directions

WHISK yolks and sugar together in medium, heavy-duty saucepan. Stir in evaporated milk, cinnamon, nutmeg and cloves. Cook over low heat for 15 to 20 minutes, stirring constantly, until mixture reaches 160º F. (do not boil) and is thick enough to coat a metal spoon with a thin film. Remove from heat.

COVER; refrigerate until thoroughly chilled, at least 3 hours or overnight. Remove cloves; discard. Stir in rum. Using a funnel, pour mixture into glass bottle with cap. Keep refrigerated for up to 7 days.

NOTE: Recipe can easily be doubled. More spices can be added to taste. If you like it sweeter, add more sugar.

    Creamy, even with substitutes!

    I love this recipe. I had to tweak it, since evap. milk is very expensive where I live. (We are in the Caribbean right now.) I used evap. milk made from whole cream powdered milk. I also used about 1/4 cup of 80proof rum since I cannot buy rum flavoring here. I am not a drinker so I added the rum before I cooked it. Creamy, yummy, but beware - it is soooo good, you'll want to keep drinking it!

    This one is not like that thick stuff you get from the store. With the rum mixed in, it is a great hostess gift to take to a Holiday party. The tropical flavor from the rum is great.
