Creamed Spinach and Tortellini Casserole is rich and cheesy and sure to be a family favorite! Creamed spinach and sliced mushrooms add extra elegance to this recipe.

Ingredients:

  • 1 package (9 oz.) BUITONI Refrigerated Three Cheese Tortellini (9 oz.), prepared according to package directions, kept hot
  • 1 package (9 oz.) STOUFFER'S Creamed Spinach, defrosted according to package directions
  • 3/4 cup (3 oz) shredded mozzarella cheese
  • 12 ounces sliced fresh white mushrooms
  • 1 small tomato, sliced
  • 1/4 cup (1 oz) grated Parmesan cheese

Directions:

PREHEAT oven to 350° F. Grease 2-quart baking dish.
COMBINE pasta, creamed spinach, mozzarella cheese, and mushrooms in medium bowl. Transfer mixture in prepared baking dish. Top with tomato slices and Parmesan cheese.

BAKE for 20 to 25 minutes or until bubbly and cheese is golden brown.

    Tasty & Really Easy

    As recommended by other reviewers I didn't use the three cheese tortelli but used the roasted garlic flavor one instead. Good choice. I didn't put any tomatoes in the recipe but added a little cayenne to kick it up a bit. Everyone loved it. I will definitely make this again since it tastes so great and it's so easy to make.

    This meal was very easy to prepare and it taste good. I was suprised how easily I put this meal together. If you are looking for something quick and easy, this is the meal. I will definitely make this again, but probably use a different type of tortellini (I didn't really care too much for the three cheese tortellini).

    I sauteed chicken in olive oil and italian seasonings and added that with sauteed portabello mushrooms to this recipe. Wish I had more leftovers for lunch the next day. Is now officially part of this family's recipe box.

    I loved the flavor of this recipe and it's ease of preparation. One problem--it calls for a 12 oz. box of creamed spinach. Stouffers is now 9 oz. If you cut back appropriately on the other ingredients this is a fabulous recipe.

    No Leftovers With This Dish!

    I added some minced garlic, fresh basil, chopped tomatoes, salt and pepper and this was SO GOOD! I made this for my husband and he said this was the BEST THING I HAD EVER cooked before. It was so easy to prepare. Next time I will double the recipe because it was all gone! This tasted like something from Olive Garden or someplace like that!!!

    This recipe is a keeper ! I made a double recipe for 5 people and had only a few bites left. Instead of having slices of tomato on top, I diced up one whole tomato and mixed it in. It's a very tasty casserole. I would definately recomend making it.

    Wonderful Recipe

    Took this to a pot luck and it was gone long before all the traditional type pasta dishes there. Everyone was raving about it. Did increase the recipe and used a 9x13 baking dish to feed more people. And added some garlic powder, salt & pepper - there is no seasoning at all in the recipe. But it was very simple to prepare with a wonderful result.

    I really liked this dish. Very easy to make, and little cleanup!!! I would recommend chopping several tomato's and mixing in with the casserole. I am going to add / sub Jalapeno Jack cheese for the Mozz cheese to give it a little kick next time.

    This is a great tasting dish that will get people to eat their spinach. The mushrooms add a great flavor. I used it without the Parmesan cheese, and added a little extra mozarella. It was filling, so it became the main dish!

    This is the hubby writing: I am a meat and potatoes type of guy. I also love chezzy veggie things as long as it has meat. I came home from work and dove right in and had 3 plates before I realized it had no meat. I loved it just as it was. Its definetly (sp) a keeper!

    This dish is very easy to make. The ingredients are on-hand items and it is absolutely delicious. I quadrupled the recipe to serve my family and guests of 9 and it made plenty! The dish is very similar to Spinach Crepes, yet it takes half the time and half the effort.

    I love that this recipe only calls for half a dozen ingredients! I whipped it up for a potluck, and although there were several other Italian dishes there, this one was completely gone at the end. Next time I will play around with it, adding a few more spices or changing the flavor of tortellini. It is a good, hearty casserole to make in a jiffy.

    I made this for my wife as a surprise dinner, she thought I went gourmet! The recipe is very simple and requires little prep time. Pop it in the oven for 25 minutes, serve with a salad, bread sticks, and a glass of wine. Very good!
