Directions:

For rich and creamy results:
Substitute an equal amount of Carnation Evaporated Milk for the regular milk called for in your recipe.

For equal richness and creaminess to milk:
Substitute half Carnation Evaporated Milk and half water to replace the milk called for in your recipe.

NOTE: For a lower fat option, use Carnation Evaporated Lowfat Milk or Carnation Evaporated Fat Free Milk.

    Growing up my Grandmother owned a restaurant. For all the special get togethers she would take out her white picture and pour one can of evaporated milk to 1 quart of milk. Yummy. It was just like cream or today's half and half.

    I remember my mother using Carnation Evaporated Milk since I was a little tyke.(And that was a long,long time ago). She would use it for baking, cooking etc, you name it she would use it. I remember her using it for her Mashed Potatoes, and I'm the Mashed Potato Queen. When I knew we were having them for dinner, I'd scoot the chair over to the counter, with my own apron helping her, my duties, were to add the milk as she used the hand masher(which I still use to this day)for the potatoes. I also remember my father using it in his coffee, and the aroma was so delightful. When he wanted a late night snack, he would toast up bread(enough for us both), cut it up in squares, heat up the Carnation milk and pour it over our toast with a tad of sugar, ummmm and it was good and I still have it. Carnation Milk was always in my parents cupboards, always in mine, and now in my daughters cupboard. Great product to have along with the great memories.

    Generally when I make home made mash potatoes which we just love, to make them so whipped and creamy I will heat up some cream, but after reading your site I now use carnation evepoarted milk, heat it up with melted butter and put on my mashed potatoes and whip with electric mixer, the best, creamiest whipped potatoes ever, so fast and easy too.

Remembering that I had read to use Carnation Fat Free Evaporated Milk in place of regular skim milk, I tried it.     Hot Chocolate with a WOW!!!

    Please believe me and try CARNATION EVAPORATED MILK for hot chocolate. For just one cup; put in the desired amount of cocoa,sugar and boiling water to make a chocolate liquid. Add enough CARNATION EVAPORATED MILK to make a cup full. It will definitely warm your heart+your tummy. :-)

    I have used Carnation Evaporated Milk as a substitute for milk in recipes since Grandma told me her secret. I began using it in coffee when I got "hooked" on the flavored creamers.     Having limited vision has it drawbacks, and one is not being able to jump in the car at will to pick up items needed for any given recipe. Milk tends to go bad before I can use all of it; and I hate waste! Carnation Evaporated is an old friend of long standing in my kitchen and that of all mu visually impaired friends. It holds indefinitely, makes even the simoplist recipes rich and delicious, and is available in usable sized packageing. Moreover, in our hurricane ravaged state, this product doesn't require refrigeration until opened. What a blessing! It is interesting that such a simple thing as canned milk could make so many lives richer, simpler, and less frustraiting and stressful.

    Being very fussy about my coffee...I am also the same about my creamer. For many years I have been using Carnation evaporated milk as my creamer. From time to time I have switched to a flavored creamer, but each time I return to my Carnation evaporated milk. Its a great way to get to a perfect cup of coffee.

    I have always used carnation evaporated milk, some other brands use filled milk which is simply skim milk with lots of additions. I prepared mashed potatoes once with regular milk and they tasted watery after all the years using my carnation! Also my puddings are creamier and tastier with evaporated milk. When melting cheese for casseroles adding evaporated milk makes the meal everytime.

    Oddly enough, I can't imagine NOT having evaporated milk in my cupboards. It was always there when I was a kid and it's something I 'just have' because it's used so frequently. Now that Carnation has the low fat and non fat versions I'm thrilled. I have substitued the low fat and non fat for regular milk and the regular evap. milk and have had 100 percent luck with it. I have been using it in my Tapioca and you cannot tell the difference. If anything I think the almond flavoring is enhanced. I perfer almond in most any plain pudding.

    I am in the habit of keeping Carnation Milk on my pantry shelf. I use it for baking in place of the skim that we use for drinking. I use it in pumpkin pie, casseroles; most generally in any recipe that calls for milk. When I am out of refrigerated milk I run to the pantry. Recipes are more creamy, not watery. Carnation Milk does make a difference.
