Creamy Potato Soup is perfect for cool, Fall or Winter evenings. This thick and hearty soup offers robust flavor and comforting warmth the whole family will enjoy.

Ingredients:

  • 2 tablespoons canola oil
  • 1 medium onion, chopped
  • 1 1/2 pounds (2 large) potatoes, peeled and cut into 1/4-inch cubes
  • 3 1/2 cups water
  • 4 teaspoons MAGGI Instant Chicken Flavor Bouillon
  • 3 tablespoons all-purpose flour, dissolved in 1/4 cup water
  • 1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Milk
  • Cooked and crumbled bacon (optional)
  • Sliced green onions (optional)

Directions:

HEAT oil in large saucepan over medium heat. Add chopped onion; cook, stirring occasionally, for 1 to 2 minutes or until tender. Add potatoes, water and bouillon; bring to a boil. Cook, stirring occasionally, for 15 minutes or until tender.

STIR in flour mixture; continue cooking for 2 minutes. Stir in evaporated milk. Bring to a boil, stirring occasionally. Top each serving with bacon and green onions.

VARIATION: If you’d like a richer soup, reduce flour to 2 tablespoons and use 1 can (7.6 fluid ounces) NESTLÉ Media Crema in place of evaporated milk.

    I think this is an excellent recipe. I have been cooking since the age of ten but never made Potato Soup. I hate it, but my husband loves it. I doubled the recipe for a large family and leftovers. Instead of oil though I fried the bacon in with celery onions and fresh garlic, then finished the recipe as specified, but let it simmer for about 40 minutes to incorporate the flavor. My family loved it. Even my three year old and I really enjoyed. It turned out quite wonderful. I will fix this again.

    I love this simply and easy recipe , the only thing I had to change was the chicken and bacon . My daughter is a vegetarian and I had to substitute the chicken bouillon with veggie broth and I just added red peppers for a little color. other wise the recipe remained the same. I would say this is a classic must try to warm up your core on those cold winter days.

    This is very easy and the options of changing this soup is endless... I added 3 cloves garlic-roasted and 1 cup shredded monteray jack cheese along with chicken broth. Grated carrots with the bacon added on top gave some color and uniqueness....

    This was very easy and we all enjoyed it. I served it in toasted bread bowls. I changed it a little, I left off 2 cups of water and substituted chicken broth in its place, this seemed to give it a richer flavor. I also added diced ham in place of the bacon.

    This meal was ready in 30 minutes!! I substituted canned chicken broth for the water and bouillon, omitted the flour step and instead mashed a few of the potatoes to thicken and added diced ham instead of bacon. Next time I'll add carrots and celery as suggested. Definitely a keeper!

    I've always made potato soup with a white sauce but decided to give this a try. I did a bit of variation in that I processed some of it in the blender when it was done and added to the top not only the bacon but shredded cheese as well. We loved the flavor and I loved the ease with which it was made.

    This is a very good soup. To make it a little creamier, I added an 8 ounce package of cream cheese to the blender and added about 1/3 of the cooked potatoes and onions and blended until smooth, then put it all back in the pot before I put in the evaporated milk. YUMMY! I also added ½ tsp. celery seed.
