Creamy Pumpkin Soup makes a great first course for a Thanksgiving meal or Fall and Winter entertaining.

Ingredients:

  • 1/4 cup (1/2 stick) butter or margarine
  • 1 small onion, chopped
  • 1 clove garlic, finely chopped
  • 2 teaspoons packed brown sugar
  • 1 can (14 1/2 fluid ounces) chicken broth
  • 1/2 cup water
  • 1/2 teaspoon salt (optional)
  • 1/4 teaspoon ground black pepper
  • 1 can (15 ounces) LIBBY'S® 100% Pure Pumpkin
  • 1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Milk
  • 1/8 teaspoon ground cinnamon

Directions:

MELT butter in large saucepan over medium heat. Add onion, garlic and sugar; cook for 1 to 2 minutes or until soft. Add broth, water, salt and pepper; bring to a boil, stirring occasionally. Reduce heat to low; cook, stirring occasionally, for 15 minutes. Stir in pumpkin, evaporated milk and cinnamon. Cook, stirring occasionally, for 5 minutes. Remove from heat.

TRANSFER mixture to food processor or blender (in batches, if necessary); process until smooth. Return to saucepan. Serve warm.

    This recipe is so easy!!!! This was my first time trying pumpkin soup and I really enjoyed it! I think I used to much onion or didn't let it cook long enough (like another reviewer said) and I still liked it. I'm the only pumpkin eater in the house (unless it's pumpkin muffins) so I'll freeze the leftovers for a quick lunch!!!! Can;t wait to try some of the modifications other reviewers suggested! No gluten - which is great!!! Thank you for a wonderful recipe!

    I tried something similar to this in Australia. I searched for years to try find like what I had tasted. After many trail and error, endured by my family, LOL, I have found the best tasting Pumpkin soup in the states!!

    I made this dish for the first time for my family this Thanksgiving. It tasted wonderful. I was able to make it earlier in the day and refrigerate it, reheating it when dinner was ready and it still tasted good. That was very handy for a day like Thanksgiving. I will definitely make this for work potlucks. It had a great texture and a mild, sweet, likeable taste (I blended to make it smooth). If I hadn't told them, they might not have guessed that it was pumpkin. Did I mention that it was easy to make as well?

    This soup is pretty good and surprizing. You have to get the idea of pumpkin pie out of your head. It's like the texture of tomato soup and has a great flavor. For 2008 I'm trying to eat healthier and this was one of my first attempts. I live by my self and smaller portioned recipies appeal to me. This fit the bill all around!

    Pumpkin Perfection!

    I made this for a Christmas Eve potluck and it was delicious and well received. I have made it twice more since then! I omitted the salt (enough in the chix broth) and added 1/8 tsp red pepper flakes for a little kick. Be sure to cook the onion well before adding other ingredients to avoid too much onion flavor. Small is approx. 1/4 to 1/3 a cup of chopped onion for reference. If you have an immersion blender, wow, great results! Enjoy!

    The soup turned out well; my family loved it! Doubling the recipe worked out great. I was happy with the simplicity of the recipie as well as the flavor. I thought about adding to it, but I feel it would've almost "bastardized" it! I made a squash casserole not too long ago from a spaghetti squash, it's a tredious process, but worth it. I like finding new ways to use pumpkin and squash in savory recipies. Gotta go check on my gravy now... Happy Thanksgiving!

    A coworker made pumpkin soup and brought some in for us to try. She said she just searched the web for a recipe. So I did the same and found this website, and the recipe here sounded like what she made. It tasted just as good too. While she left hers 'chunky' and I liked it this way, for Thanksgiving dinner I thought I'd puree it. Mmmmm, very nice. I think my 3 year old may even like it! He's very picky about texture so the chunky-ness may not have gone over so well. My friend said the recipe didn't make very much so I went ahead and doubled it from the start. I think my Dad will like to take some home after the holiday meal and I won't mind have some extra around or in the freezer. I used lower fat evaporated milk and it's not lacking at all. A touch of nutmeg (not too much) also goes nicely. Happy Thanksgiving! Enjoy!

    A nice change from the usual!

    I was looking for something totally different to make for date night, and this seemed to fit the bill. My partner raved about it, and it's not generally something she would even try! The reason I gave it 4/5 stars was because of the food processing part, which seemed like a lot of work. Worth it, though, in the end! I piped a little sour cream on the top (made it look like a spider web!) which was a nice touch, too! Enjoy!
