Creamy pudding with tender, sweet dried fruit and just a hint of nutmeg.

Ingredients:

  • 1 1/3 cups water
  • 2/3 cup long-grain white rice
  • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
  • 1/2 cup raisins, dried cranberries and/or dried cherries
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs, lightly beaten

Directions:

PLACE water and rice in medium saucepan; bring to a boil. Reduce heat to low; cover. Cook for 12 to 15 minutes or until liquid is absorbed.

STIR in evaporated milk, raisins, sugar, vanilla extract, nutmeg and salt; bring to a boil. Stir a portion of rice mixture into the eggs. Add egg mixture to rice mixture; mix well with wire whisk. Bring to a boil. Cook, stirring constantly, for 2 minutes. Serve warm or chilled.

FOR COCONUT RICE PUDDING:
SUBSTITUTE
½ cup toasted or untoasted flaked coconut for raisins.

    The other night I was going through my very best bakers recipes, and I found this Creamy Rice Pudding recipe, I was so impressed about how easy it was, so I went into the kitchen and made it. It was so easy, but I cooked it a little too long, so I added some International Delight coffee creamer, flavor French Vanilla, and a little bit more milk. My children were very impressed with it, said it wasn't like the one that I have always cooked but they liked it very much. I made another one yesterday and took it to my neighbor who just had surgery, she called me this morning and told me how much she enjoyed the rice pudding. I think I will keep this recipe because it's so easy and good. Thanks for sharing...

    I had been looking for a good rice pudding recipe. My grandma made the best to me and this reminded me of hers. I made a couple of minor adjustments though. I added maybe 1/8 tsp almond extract with the vanilla and used only 1/4 tsp nutmeg and 1/2 tsp cinnamon. I ate it warm with a dollop of whip cream. It was so flavorful with just a hint of almond. I loved it.

    Good basic recipe for rice pudding

    I made this last night and it was very good. The few things I did differently was I substituted cinnamon for nutmeg, as I prefer the taste of cinnamon. I added a dollop of whipped cream on top with a sprinkle of cinnamon sugar on top. I also used 1/4 cup of raisons versus the 1/2 cup, as not all family members like raisins. I used a smaller amount, instead of eliminating them all together, basically for added texture and color. Next time I make this I will double the recipe as the 4 of us polished this off in one sitting. It was very tasty!
