Chewy and sweet, dates make a wonderful filling for these bars with a tasty oatmeal crust. A touch of cinnamon is all it takes to transform these simple treats into a heavenly delight.


  • 8 ozs. chopped dates
  • 3/4 cup NESTLÉ® CARNATION® Evaporated Milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup (1 stick) butter or margarine, softened
  • 1/2 cup packed light brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup quick cooking oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

PREHEAT oven to 400° F. Grease 8-inch-square baking pan.

COMBINE dates, evaporated milk, sugar and vanilla extract in medium saucepan. Cook, over medium-low heat, stirring occasionally, for 8 to 10 minutes or until thickened. Remove from heat.

BEAT butter and brown sugar in large mixer bowl until creamy. Beat in flour, oats, baking soda, salt and cinnamon. With floured fingers, press half of crust mixture onto bottom of prepared baking pan. Spread date filling over crust. Top with remaining crust.

BAKE for 20 to 25 minutes or until golden. Serve warm.

Date bars: Old School, New Twist

Date bars bring me back to my Mom's kitchen forty years ago. Every special occasion had date bars present. And my kids love them too! After 55+ years,I have just recently found that celiac disease is putting a crimp in my love of baking! Bread, Bagels and cookies, you can find me baking something everyday. Now I have to re-tool my faves sans wheat, or do without. This morning I had the yen for date bars,having gotten dates a week or so ago to make the bars and did some quick substitution. For the offending wheat, I substituted 1/2 Cup Brown rice flour and 1/2 cup soyflour. There was no other adjusting that needed to be done since there's need to add a rising ingredient for these. I just cut my still warm from the oven Date bars, and VOILA!Perfecton. Don't be afraid to twist your recipes when some food offeder throws you a curve, the result is more than terrific!

These bars were easy to make and delicious. My husband and I relaly like dates so I doubled the date mixture. They were irresistable!
