Chewy and sweet, dates make a wonderful filling for these bars with a tasty oatmeal crust. A touch of cinnamon is all it takes to transform these simple treats into a heavenly delight.

Ingredients:

  • 8 ozs. chopped dates
  • 3/4 cup NESTLÉ® CARNATION® Evaporated Milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup (1 stick) butter or margarine, softened
  • 1/2 cup packed light brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup quick cooking oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Directions:

PREHEAT oven to 400° F. Grease 8-inch-square baking pan.

COMBINE dates, evaporated milk, sugar and vanilla extract in medium saucepan. Cook, over medium-low heat, stirring occasionally, for 8 to 10 minutes or until thickened. Remove from heat.

BEAT butter and brown sugar in large mixer bowl until creamy. Beat in flour, oats, baking soda, salt and cinnamon. With floured fingers, press half of crust mixture onto bottom of prepared baking pan. Spread date filling over crust. Top with remaining crust.

BAKE for 20 to 25 minutes or until golden. Serve warm.

    Date bars bring me back to my Mom's kitchen forty years ago. Every special occasion had date bars present. And my kids love them too! After 55+ years,I have just recently found that celiac disease is putting a crimp in my love of baking! Bread, Bagels and cookies, you can find me baking something everyday. Now I have to re-tool my faves sans wheat, or do without. This morning I had the yen for date bars,having gotten dates a week or so ago to make the bars and did some quick substitution. For the offending wheat, I substituted 1/2 Cup Brown rice flour and 1/2 cup soyflour. There was no other adjusting that needed to be done since there's need to add a rising ingredient for these. I just cut my still warm from the oven Date bars, and VOILA!Perfecton. Don't be afraid to twist your recipes when some food offeder throws you a curve, the result is more than terrific!

    A co-worker had some dates that were leftover from Christmas. He said that they were dry and he was going to throw them out. I love dates for anything and I immediately begged him to let me have them. I told him they were still good and I would make something with dates in it and bring it to work the next day. I baked up these bars and brought them to work. Judging from their previous comments about dates, I thought that I would have a whole pan left but when I went to retrieve my pan after work, to my surprise, there was only a small corner left for me. From then on whenever we have an occasion to bring treats from home, they ask for these date bars. Even the ones who said they didn't like dates, ate these and loved them. So I rate these excellent and so do my co-workers.

    I tried it, and my husband and kids loved it. It tasted better once it cooled. The crust and crumbled toping came out great, and not dry like some other recipes I tried. My one year old loved them as much as my husband did. I wanted to find a good and dependable recipe for Date bar for my husband. This is it !! Just one suggestion, try brown sugar in the date mixture instead of regular white sugar, it will taste better like mine did.
