Easy Cream of Broccoli Soup is simple and satisfying and can be made in less than an hour. It is a good way to get broccoli into the tummies of fussy eaters. (Great for the lunchbox thermos, too!)

Ingredients:

  • 1 pkg. (16 oz.) frozen chopped broccoli
  • 3/4 cup water
  • 1 can (14.5 oz.) chicken broth
  • 1/4 cup (1/2 stick) butter or margarine
  • 1/4 cup chopped onion
  • 1/4 cup all-purpose flour
  • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk

Directions:

BOIL water in medium saucepan. Add broccoli; bring to boil. Cover; reduce heat to low. Cook for 5 to 7 minutes or until tender; drain. Place half of broccoli and chicken broth in food processor or blender; cover. Process until smooth.

MELT butter in same saucepan over medium heat. Add onion; cook, stirring occasionally, for 1 to 2 minutes or until onion is tender. Stir in flour. Gradually stir in evaporated milk. Cook, stirring constantly, until mixture comes to a boil. Add broccoli mixture and remaining chopped broccoli. Heat through.

    I tried this today on July the 4th! It's a cool damp day in New England. The soup was easy to prepare, but seemed lacking something in the flavour dept. I added salt & pepper in the beginning - so it didn't lack that. Perhaps next time I'll use fresh broccoli. It seemed it didn't taste "broccoli" enough. I even added some locally made white cheddar cheese. Maybe even some bacon will be good cooked with the onion. Still, it was a hearty and satisfying soup!

    All I have to say is that this is the best soup I have ever made. My husband loves it! Instead of frozen broccoli, I used 2 heaping cups of fresh broccoli including the stems (why waste them! - just make sure that you peel the exterior). I also added a couple dashes of pepper, 1 tsp. salt and 1 clove of garlic finely chopped for added flavour. Also, to make the soup more economical, I made my own chicken broth (I measured 14.5 oz. of boiled water and added 2 oxo cubes). This is my new favorite recipe!

    Very good soup, and quick and easy...I used chic. broth in place of the water, along with the other broth called for, creamed all the broccoli instead of leaving some chunks, and sprinkled finely shredded cheddar on top when serving. Fried crumbled bacon goes well too as a garnish on top.
