Everyday Pumpkin Parfait is perfect from morning to night to satisfy your craving for a sweet and crunchy healthy snack. The pumpkin blends easily with the yogurt to add a unique twist of flavor to this creamy yet crunchy treat.
- 1 cup fat-free or lowfat vanilla yogurt
- 1/4 cup LIBBY'S® 100% Pure Pumpkin
- 1/4 teaspoon pumpkin pie spice
- 1/2 to 2/3 cup lowfat or fat free granola

PLACE 1/2 yogurt mixture into two 1-cup parfait glasses. Top yogurt mixtures with 1/2 of granola. Top each with remaining yogurt mixture and granola.

Great after thanksgiving dinner reminds me of fall and halloween. Brings the fall season into your house with nice hot nestle chocolate dring to go with it.

I absolutely love pumpkin so I had to try this. What a creative idea for a parfait. So simple yet so flavorful. It is great any time of day- for a quick breakfast or after dinner snack. It is healthy with the pumpkin and the yogurt. Thanks so much for the recipe! It will be made often.

I USED A LOW-FAT YOGURT AND FEED IT TO ABOUT 20 MEN - I RECEIVED GOOD AND BAD REVIEWS - SOME SAID IT NEEDED MORE PUMPKIN AND OTHERS SAID IT WAS GOOD BUT TO EACH THEIR OWN OPINION. HOPEFULLY WHEN I MAKE THIS AGAIN, I CAN HAVE SOME TO TRY.
