This Fiesta Taco Skillet is a perfect combination of Mexican-style corn, taco seasoning and corn meal and creates a wonderful, aromatic meal.

Ingredients:

  • 1 lb. ground beef
  • 1 can (11 oz.) Mexican-style corn, drained
  • 2/3 cup water
  • 1 packet (1.25 oz.) taco seasoning mix
  • 1 cup (4 oz.) shredded cheddar cheese
  • 3/4 cup yellow corn meal, (see note below)
  • 1/4 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 cup NESTLÉ® CARNATION® Evaporated Milk
  • 1 large egg, lightly beaten

Directions:

PREHEAT oven to 400° F.

COOK beef in well-greased 10-inch cast-iron skillet over medium heat until no longer pink; drain. Stir in corn, water and seasoning mix. Cook over low heat for 6 to 8 minutes or until mixture thickens. Top with cheese.

COMBINE corn meal, flour, sugar, baking powder and salt in medium bowl. Combine evaporated milk and egg in small bowl; mix well. Add milk mixture to corn meal mixture; stir just until blended. Spread over top of meat-cheese mixture.

BAKE for 20 to 25 minutes or until wooden pick inserted in center comes out clean.

NOTE: May also use ALBERS White Corn Meal.

    I made this recipe tonight, instead of using Mexican corn, I used frozen corn, diced up one small green bell pepper, and 1/2 onion. I also used a box of Jiffy Corn Muffin Mix. I thought it was fast and easy. And it tasted good also. I will be making this recipe again.

    Even my toddlers ate and enjoyed this. I used tomato sauce instead of water. It had less of a taco meat taste. I also cooked it in the crock pot on low for 6 hours. 4 hours would have been plenty. Grease the pot to make clean up easier.

    This recipe is easy to use with leftovers. It was great to go to the refrigerator to see what I could use in it. I substituted leftover roast for the ground beef. I also used the leftover corn from the same dinner. The family loved it.

    Not very good. Really easy, but next time I'll just stick with my chili and cornbread. The cornbread topping was overcooked on top, but because of the moisture of the filling it was doughy inside. Yuck.

    This dish is so good. I did add a can of kidney beans, cilantro, onions, garlic and a can of tomatoes. I used a box of corn bread mix for the topping. Honestly, I wasn't sure if I would like this recipe but I did have the ingredients on hand and both my husband and I loved it. It was a nice blend of sweet and spicy. I will make this again.

    Fiesta Taco Skillet was a huge hit! I did add 1/2 cup mdm salsa, 1 sm onion, 1 sm red bell pepper, 1 garlic clove, 2 small fresh tomatoes, kidney beans and a little fresh cilantro. Sounds like a lot - but everything came together wonderfully and tasted sooooo good. With fresh guacamole dip and sour cream, this is a great meal.

    This recipe is so fast and easy. Adding salsa makes it a bit more spicier than the taco seasoning alone. With the Albers corn meal and the Carnation canned milk, this recipe is very nutritious. A definite keeper.

    Quick'n easy...I'm a little bold on South of the Border recipes, So, I altered this recipe a little. The crust wasn't quite the taste I like. I added 1/4 cup Tamale flour and just 1/2 cup corn meal. I also added 1-tsp of cumin with the sauce. I could explore a little more, but let's leave it at well enough.

    This recipe was incredibly easy and turned out wonderful. My family loved it! I hadn't made any plans for dinner and my family was very hungry because I was already an hour late in preparing something! I found this and happened to have all of the ingredients in the pantry. It took about 20 minutes total to get this to the table. I substituted boxed cornbread mix, so the only thing that took time was the browning of the ground beef! Excellent!     We are keeping this recipe! I did read the reviews before I made it. I did put the sour cream as a topper. I also added more picante sauce before the cheese( just a little) It was great! When I make it without our kids I will add more picante( husband and I like spice)...so keep up the good cooking, ..at least some of us can cook...but at least I can read so I can follow directions!!!!!!!!

    I made this recipe for dinner two nights ago; I was looking for something different and I found it. Deciding to make this spur of the moment I had to improvise. I used ground turkey instead of beef. Also, I only had creamed corn in the pantry so I substituted half of a green pepper and a small onion, diced, along with a can of diced chilis. I combined the turkey, pepper and onion and browned all. I also added some extra cumin to the taco seasoning, followed the recipe for the cornbread topping. At the table my family added toppings of salsa, sour cream, green onions and black olives. My husband and both my teenagers loved it. This was a very nice diversion from our usual tacos. Thanks for another great new recipe!

    My husband's favorite food is anything Mexican. I tried this casserole and it was a big hit with him. This is one recipe that I will get lots of use out of. I very carefully with a spatula lifted the leftovers into a flat baking dish and reheated it in the oven so the cornbread topping would be crisp and I think it was better the second time around. Thanks for a very good recipe that has everything in one dish.

    Made this one night while on vacation. So easy to make and tasted great! Didn't have any of the ingrediants for the corn meal topping, so I used a pre-packaged corn muffin mix and spooned it over the top. Makes the dish even EASIER to make. Also didn't have a cast iron skillet so I cooked the meat & stuff and put it in a casserole dish. Went over big, the whole thing was gone in about 60 seconds! Next time I will add some extra ingrediants and try sour cream and salsa for topping!

    This was a litte dry, however I am going to try again. I think what I will do is add a can of Nacho Cheese soup to the meat mixture. And use tator tots instead of the Corn Meal topping.. (kids will like that better)

    After reading previous reviews of this meal being too dry, I decided to add a little something more. First I added chopped onions and then 3/4 can of Creamy Ranchero Tomato Soup. ( I found it in the regular soup aisle, but it is for tacos.) Family loved it.
