Four Layer Hamburger and Macaroni Casserole is quite easy to make and perfect for any occasion. Frozen macaroni and cheese, ground beef and taco seasoning mix make a surprise-filled casserole enhanced with sour cream, crushed tortilla chips and shredded Cheddar cheese. Each layer packs lots of zesty flavor.

Ingredients:

  • 2 packages (10 ounces each) LEAN CUISINE frozen Macaroni and Cheese, defrosted*, divided
  • 8 ounces lean ground beef
  • 2 tablespoons (half of 1.25-ounce package) taco seasoning mix
  • 2 tablespoons fat free sour cream
  • 1/2 cup diced tomato
  • 1/3 cup crushed baked potato chips or tortilla chips
  • 1/2 cup (2 ounces) shredded cheddar cheese

Directions:

PREHEAT oven to 400º F.

COMBINE beef and seasoning mix in large, nonstick skillet. Cook over medium-high heat, stirring occasionally, for 2 to 3 minutes or until beef is no longer pink.

COMBINE 1 package macaroni and cheese and sour cream in medium bowl; spread over bottom of 8-inch-square baking dish. Top with beef mixture. Spread remaining package macaroni and cheese over beef mixture; top with tomato, potato chips and cheese.

BAKE for 20 to 25 minutes or until bubbly around edges.

* DEFROST macaroni and cheese in microwave on MEDIUM (50%) power for 5 to 6 minutes.

    This was the first dish I tried from this site. I must say, it was SCRUMPTIOUS!! I didn't have the frozen mac & cheese on hand so substituted with 2 boxes mac&cheese. I also put in some (frozen) red and green peppers when cooking the beef and taco seasoning. And I chopped up two large tomatoes for the top but ALSO added salsa. I actually forgot to add the sour cream this time but got a lot of raves about it nonetheless. I added more chips to the top too and I think I'll add even more next time, along with some olives (and the sour cream of course!!) I love that it's freezable as that will definitely come in handy!!

However I did add extra sour cream, because you can never have to much of sour cream! :) I agree with Kim, the poster below me, that leftovers are even better.     I was looking for something quick and satisfying and this is definitely it. I added onions and green peppers (already cut up and frozen) when I browned the meat (forgot the taco seasoning) and used chunky salsa instead of the tomatoes to give a little more of a distinct flavor....definitely worth it. Also increased the sour cream to 1/3 cup. Had a little leftover for lunch and it was just as good the second time around. Definitely worth a try!!!
