Kids will love these yummy and fun Great Pumpkin Cookies! The cookies not only include pumpkin, they have oats and can be decorated with all sorts of goodies like chocolate chips, icing, and candies or enjoy them plain.

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/3 cups quick or old-fashioned oats
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) butter or margarine, softened
  • 1 cup packed brown sugar
  • 1 cup granulated sugar
  • 1 cup LIBBY'S® 100% Pure Pumpkin
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup chopped walnuts
  • 3/4 cup raisins
  • Decorating icings, NESTLÉ TOLL HOUSE Semi-Sweet Chocolate Morsels, candies, raisins and/or nuts (optional)

Directions:

PREHEAT oven to 350° F. Grease baking sheets.

COMBINE flour, oats, baking soda, cinnamon and salt in medium bowl. Beat butter, brown sugar and granulated sugar in large mixer bowl until light and fluffy. Add pumpkin, egg, and vanilla extract; mix well. Add flour mixture; mix well. Stir in nuts and raisins. Drop ¼ cup dough onto prepared baking sheet; spread into 3-inch circle or oval. Repeat with remaining dough.

BAKE for 14 to 16 minutes or until cookies are firm and lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Decorate with icings, morsels, candies, raisins and/or nuts.

    My family loves these cookies. It has been a tradition to make these when fall rolls around, so it just doesn't feel like fall unless we've made them. I love that they are soft and chewy. They are also really wonderful with chocolate chips in them. I used to (and still) love making them pumpkin shaped and decorating them like jack-o-lanterns with candy corn teeth. I plan to carry on this tradition when I have children of my own.

    My daughter's second grade class had a "Pumpkintology" class. They all had to bring in something made using pumpkin. We chose this recipe. Mind you not one person in our family likes pumpkin flavored anything but we all loved these cookies. They were so good we had to make them twice!! They are our new seasonal favorite.     Best soft cookie... Ever!

    I made these cookies for halloween. EVERYONE LOVED THEM!!! I used a heaping tablespoon to measure the batter (they still took the same amount of time to bake). I used 10X sugar, egg white and lemon juice for the icing and arranged roasted pecans for on top. They were awesome!!! To store them, I placed wax paper between each cookie. The orange from the pumpkin ran a little on the icing.

    These are great! I made them into pumpkin shapes, when they were cool, I put a Dot of canned frosting for the eyes, nose, and mouth. My son decorated them with choc. chips, marshmellows, and candy corn. His kindergarten class all loved them! I will make them again for Christmas in snowman shapes.
