Ingredients:

  • 3 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 3 cups granulated sugar
  • 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
  • 4 large eggs
  • 1 cup vegetable oil
  • 1/2 cup apple juice or water
  • 1 large baking apple, peeled, cored and diced

Directions:

PREHEAT oven to 350° F. Grease and flour two 9 x 5-inch loaf pans.

COMBINE flour, cinnamon, baking soda and salt in large bowl. Combine sugar, pumpkin, eggs, vegetable oil and apple juice in large mixer bowl; beat until just blended. Add pumpkin mixture to flour mixture; stir just until moistened. Fold in apples. Spoon batter into prepared loaf pans.

BAKE for 65 to 70 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.

FOR THREE 8 X 4-INCH LOAF PANS:
PREPARE
as above. Bake for 60 to 65 minutes.

FOR FIVE OR SIX 5 X 3-INCH MINI-LOAF PANS:
PREPARE
as above. Bake for 55 to 60 minutes.

    I usually shy away from breads or just use a bread maker. I haven't even tried banana bread. But this recipe was so easy I decided to give it a try. I have received only "wonderful!" reviews on this bread from family and friends and people beg me to give them the recipe. Feels good for a "non baker" like me to have so many people appreciate my efforts (even though is was no effort at all). I tried using double the amount it calls for of apples and using water instead of the juice and it still comes out wonderful and moist.

I did make a couple of substitutions: half whole wheat flour and only 2.5 c of sugar to make it a bit healthier (of course, the cinnamon sugar I sprinkled on top probably negated the healthiness!     Who doesn't love delicious sweet breads! And this one takes the cake! I didn't have apple juice but I did have cider, so I substituted. This is so moist that we are eating it like cake.     I really loved this recipe! Pumpkin is one of my favorite baking ingredients. The bread turned out so moist and flavorful. Instead of using loaf pans, I used a bundt pan. I also added a couple of apples rather than just one. And I added a cup of chopped walnuts and a cup of coconut!

    I've made this bread several times, including as a dessert for Thanksgiving and Christmas. As soon as my husband finds out I'm making it, he instantly asks if it's for him. Last Thanksgiving he ate both loaves by himself and didn't save any for the rest of the family! I had to make four loaves for Christmas just to ensure there'd be enough to go around. It's extremely moist and delicious. I substitute half of the sugar for Splenda and half of the white flour for wheat flour just to make it a little healthier. It's still delicious!

    This quick bread is great! My family really liked it. I did, however modify it just a bit. I decreased the oil to 1/2cup, and I used a blended flour (1/2 wheat & 1/2 white) to hold the moisture. I also decreased the sugar by 1 cup, added a tsp. of nutmeg and a cup of chopped walnuts. It turned out very well, but was even better a few days later! I will be making this for my Christmas gift baskets this year. Thanks for the great recipe!

    Everyone who has tasted this bread asked for the recipe. I did modify the bread with excellent results. I replaced 1/2 cup of the flour with whole wheat, cut back the oil to 3/4 cup, cut back the sugar to 2 3/4 cups, added an extra apple, & 1/8 teaspoon of nutmeg. This bread is very moist & delicious I will make it often.
