Ingredients:

  • Nonstick cooking spray
  • Granulated sugar
  • 1/2 cup NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
  • 2 tablespoons butter
  • 1 tablespoon NESTLÉ® TOLL HOUSE® Baking Cocoa
  • 1 large egg, separated
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons granulated sugar
  • 2 bite-size caramel-filled chocolates
  • Powdered sugar (optional)

Directions:

PREHEAT oven to 400° F. Spray two 6-ounce ramekins or custard cups with nonstick cooking spray; coat lightly with granulated sugar.

MICROWAVE morsels, butter and cocoa in medium, uncovered, microwave-safe bowl on HIGH (100%) power for 45 seconds; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10-second intervals, stirring just until morsels are melted. Stir in egg yolk and vanilla extract.

BEAT egg white in small mixer bowl until soft peaks form. Gradually beat in 2 tablespoons granulated sugar until stiff peaks form. Stir one-fourth of egg white mixture into chocolate mixture to lighten. Fold in remaining egg white mixture gently but thoroughly. Spoon into prepared ramekins, filling about 3/4 full. Drop 1 bite-size chocolate into center of each soufflé; press in slightly. Place soufflés on baking sheet.

BAKE on center oven rack for 16 to 20 minutes or until puffed and center still moves slightly. Sprinkle with powdered sugar. Serve immediately.

    I printed out this recipe last year, and finally got around to making it for New Year's. When you see "souffle," you automatically think it's a difficult recipe. Of course, when I saw the "Easy" rating, I was a bit surprised. It is indeed a very easy, straightforward recipe. Needless to say, it's a chocolate lover's delight, and there's plenty of that in this household. I might say it may become a dessert favorite here. Next time, it'll be a chocolate ganache to top this souffle.

    I followed Ms. Gabelman's instructions for prepping ahead and baking just a little longer. They were excellent!! I made a cream anglaise to accompany...delicious! My husband really enjoyed the father's day treat. Any dessert with no leftovers is great, because otherwise I'm tempted to eat all the leftovers.     This is a wonderful recipe for a special occasion. It can easily be doubled or tripled. I found that you can make the souffles up to the point of baking it off. Chill in the refrigerator for a few hours, then bake it for 3-4 minutes longer. I get the same results with no last minute preparations. It is always a wow.

    Once again I tryed something new and messed it up, but it still tasted very good and rich. It wasn't all that hard to make but it would help to read the directions through first. After getting it all put togrther and in the oven for 10 minutes, I looked at the recipe thinking that wasn't so hard and found out I forgot to put the egg yolk and vanilla in. It didn't rise like the picture showed and I put a mini peanut butter cup in the middle. My husband doesn't like caramel. I will do again and try to get it right .
