Honey-Dijon Chicken

Ingredients

Nonstick cooking spray
2 tablespoons honey
2 tablespoons Dijon mustard
4 (about 1 1/4 pounds total) boneless, skinless chicken breast halves
1/2 teaspoon ground black pepper
2 teaspoons chopped fresh parsley (optional)

 

Directions

PREHEAT oven to 400° F. Line baking sheet with foil; lightly coat with nonstick cooking spray.

COMBINE honey and mustard in small bowl. Place chicken on prepared baking sheet; sprinkle with pepper.

BAKE for 15 minutes. Brush with honey-mustard mixture. Bake, brushing twice with additional glaze, for 15 to 20 minutes or until chicken is no longer pink in center. Sprinkle with parsley.

    It was a little strong and spicey, but very delicious. I hate mustard and honey by themselves, but I love the combination of them both with the chicken. My husband liked it also. It was very easy to make and cleaned up really easy. I would definitely make it again.

    Hate Mustard, But This Is Good

    I made this one night with some rice and steamed carrots. The honey-dijon is very tasty on top of the chicken, and I'm not even a mustard fan. But instead of having a 50/50 mixture of honey and dijon, I used more honey. I'm definitely excited to try this one again.

    Very Good but made minor changes

    Instead of brushing the chicken with the honey & mustard mixture I put the chicken the mixture and coated both sides and then coated the chicken in plain bread crumbs. It was full of flavor and looked more appealing.

    adding cheese made it better

    This was an easy recipe that gave everyday chicken a new taste. However, instead of buying both honey and dijon mustard, I just bought a bottle of honey mustard sauce already mixed and it tasted great. I also topped my chicken with bacon!
