These were a wonderful twist on a regular chocolate chip cookie. Even my son who kept saying he didn't like coconut couldn't stop eating them. The 1st batch I made I used the toasted coconut but you really couldn't taste the coconut so I added 1/2 cup of untoasted coconut and it tasted so much better. My son says these are now his favorite cookies.

    Scrumptious Island Cookies

    IDA BEEK from Landing, NJ

It was a rainy day today and I had a copy of the Island Cookie recipe handy, was lucky to have all the ingredients in my pantry and decided to make a double batch. All I can say is"WOW"! The toasted coconut is one ingredient that gave this cookie recipe that Island flavor. I also used macadamia nuts which I toasted slightly to give it a tropical taste. They were a hit with my husband and even a bigger hit my next door neighbor's children. Making a double batch was my good idea for the day.

    mmm island cookies

    gianna elden from Ca

I used a mixture of white and milk chocolate chips. I also used macadamia nuts, which I found to be an incredible compliment to the toasted coconut and white chocolate. I also upped the flour as I always do to get a soft, chewy as cookie. To add fattness I use an ice cream scoop. I get so many requests for my cookies doing it that way.

The few choice friends that I shared these cookies with agreed that they were the best cookies ever! I'm making them tonight for my mother-in-law since she loves coconut, and who am I kidding? I can't wait to eat one or two with my tea tonight too!

    Very good cookies!

Jean Thompson from Dumfries , VA

These are very good cookies; I really enjoyed them. Made them for a friend to send to her, and I think I will make them again for myself. I will, however, leave out the chocolate chips--not quite to my taste, but with chopped dried pineapple or raisins or dried cranberries theyd be wonderful as well. I took some of them to work and they were gone before lunch time. Thanks!
