Delicious Recipe To Welcome Spring

 Star(s)

Susan Campbell from GRASS LAKE, MI

I worried about "not enough lemon flavor" but decided to go with the recipe as it was written. I found that it had plenty of flavor, perhaps not overwhelmingly lemon, but also not so strong that those who dislike lemon wouldn't eat it. Next time around, I'll try adding a teaspoon of lemon extract, which should give it additional tartness and zing. I might also try making it with lime juice and zest.

So good that I asked for a lemon from my neighbor!

    N. Chapman from

I was so eager to try out this recipe that I asked my next door neighbor for a lemon. He has a lemon tree growing in his yard and let me tell you, the end result was so delicious. It is totally worth asking your neighbor for fresh lemons, then make an extra one for your neighbor as a gift in return!

This was one of the easiest cheesecakes I have ever made. It is thin enough to help with calories, but give you a wonderful feeling of cheating. I think I will try it next with either light of fat free cream cheese and/or condensed milk.

I made this tart for our church lunch today, and another for my sister's visit later this evening. After reading the reviews, I decided to add more lemon juice and I'm glad I did. This was well recieved at the lunch and I know my sister will enjoy it too. I made a copy of the recipe for her. I will make this again this Spring, and other times too.

    Excellent

    Jennifer Almond from Loganville, Ga

I really love this recipe. It does need a little bit of a stronger lemon taste. I spread a bit of lemon curd over the top and then added the fruit. It also keeps the berries from rolling around when transporting it.

    lemon tart

    Sharlene Birkland from STEILACOOM, WA

This is overall a nice recipe. It is very easy to make and has a lovely presentation; however, I only rated it as average because it has very little lemon flavor to it, even when I doubled the amount of lemon zest. I would recommend doubling both the zest and the amount of lemon juice to amp up the flavor....with a bit more tartness and zip this recipe would definitely be excellent!
