Want to make a pumpkin pie but do not have spices on hand? Libby's® Easy Pumpkin Pie Mix to the rescue! All you need to bake this treat is a 5 fl.-oz. can of Carnation® Evaporated Milk, 2 large eggs and a 9-inch deep-dish pie shell.

Ingredients:

  • 1 can (30 oz.) LIBBY'S® Easy Pumpkin Pie Mix
  • 2/3 cup (5 fl.-oz can) NESTLÉ® CARNATION® Evaporated Milk
  • 2 large eggs, beaten
  • 1 unbaked 9-inch (4-cup volume) deep-dish pie shell

Directions:



MIX pumpkin pie mix, evaporated milk and eggs in large bowl.

POUR into pie shell

BAKE in preheated 425°F. oven for 15 minutes. Reduce temperature to 350° F.; bake 50 to 60 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate.

FOR 2 SHALLOW PIES, substitute two 9-inch (2-cup volume) pie shells. Bake in preheated 425° F. oven for 15 minutes. Reduce temperature to 350° F.; bake for 40 minutes or until pies test done.

NOTE: Do not freeze, as this will cause the crust to separate from the filling.

FOR LOWER FAT/CALORIE PIE, substitute NESTLÉ® CARNATION® Lowfat Evaporated or Fat Free Evaporated Milk.

FOR HIGH ALTITUDE BAKING (3,500 to 6,000 ft.): Deep-dish pie - extend second baking time to 55 to 65 minutes. Shallow pies - no change needed.

    I believe this is the best pumpkin pie, ever. I love pumpkin, but since my husband isn't quite as much of a fan, a whole pie is not always useful. What I began to do, is open a can and keep it in a bowl in the fridge. I take some out, put some whipped cream on it and eat as-is. I do, however add some cinnamon. It satisfies my craving for pumpkin without the need for an entire pie. The Pumpkin Pie Mix keeps well.

    I have tried other recipes and this is by far the best and easiest! I have never gone wrong making this pie. I'm the daughter in the family that was always in charge of making all of the pies for the family get together at Thanksgiving and Christmas. My mother, Betty Crocker herself,(not really) is a make from scratch baker and has taught all of her children how to bake. She loves this recipe as well as one of her own.     A Great and Thankful Treat

    I recieved a big surprize for Thanksgiving 2007... my range/oven of 9 years stopped working. To make a long story short. All I had for a oven was a small portable oven to make my big dinner in. So back to the store I went. I bought a small ham and all extra's to go with it. Plus I bought a can of Libby's Pumpkin ready pie filling and a ready made pie crust. I finally got everything made and put together, with only a few hours delay. And the dinner turned out excellent. Especially the Pumpkin Pie!!! Everyone loved the flavor.     I absolutely love Libby's easy pumkin pie mix. I make pumpkin pies every year for my family for Thanksgiving and Christmas, and they love it, but I have never liked the way pie crust tastes. So, awhile back, I started using a Graham cracker crust for my pumkin pie. It tastes great and I don't have to make my own or wait for one to warm up to room temp. Hope this is helpful to any mom's with "picky eaters". And no, the crust doesn't burn. Follow the Libby's directions and your pie will be fine. Good Luck!
