Libby's® Pumpkin Pear Strudel features pears, pumpkin and chopped nuts sweetened with brown sugar and spices wrapped in puff pastry sheets. Pop them into the oven for a few minutes and out will come a light and flaky pastry bursting with sweetness and flavor.

Ingredients:

  • 2 cups (about 2 small) peeled, cored and diced pears
  • 1 cup LIBBY'S® 100% Pure Pumpkin
  • 3/4 cup packed brown sugar
  • 3/4 cup chopped walnuts
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground ginger
  • 2 sheets (17 1/4-ounce package) frozen puff pastry, thawed according to package directions, divided
  • 1 large egg, lightly beaten
  • Cinnamon-sugar

Directions:

PREHEAT oven to 375° F.

COMBINE pears, pumpkin, sugar, nuts, cinnamon, cloves and ginger in medium bowl. Spoon one-half of filling in center third of 1 pastry sheet.

MAKE downward slanting strips in outer sections of pastry (3/4-inch apart) starting about 1 inch away from top of pastry and side of filling, cutting to outside edges. Starting at top, alternately fold left and right side pastry strips over filling forming a braid. Seal at top and bottom of strudel. Place on ungreased rimmed baking sheet. Repeat with remaining filling and pastry sheet. Brush strudels with egg; sprinkle with cinnamon-sugar.

BAKE for 25 to 30 minutes or until golden brown and puffy. Serve warm.

    This dish was relatively easy to make and as I do not particularly care for pears I still thought it was pretty good. My family loved it. The next time I cook it I may try it with peaches as I really like peaches a lot. Using the puff pastry was a big plus as it would have been a lot harder to bake if I had to make the pastry.

    I made this for my son, who adores strudel. I did not tell him it was pumpkin apple, for fear that he would not try it. I also added 1/4 cup pecans to the filling of mine. It was really tasty.     I just made this and everyone loved it! I had fresh pears from our tree that I needed to use before they got too ripe. I was pleased to find a pear recipe on this site. I did have trouble finding the pastry puffs but finally found them at one store locally. They are definitely something I will make again and probably something that I will make with other fruits also.     A Christmas Breakfast Treat

    I have made this recipe several times for my family and friends for Christmas breakfast. It makes for a very delicious beginning to this special holiday. I usually serve it with a hot fruit compote and cheesy sausage and egg casserole. The puff pastry is not that hard to work with and turns out so flaky and brown if you do not overwork the dough and try to keep it cold. Sometimes I add raisins to the filling and have also substituted apples for the pears. This dessert makes the Christmas breakfast table so pretty and festive! Of course, it is delicious at the end of any other meal, too!
