- 2 packages (9-oz.) BUITONI Refrigerated Linguine (9 oz.)
- 1 package (7-oz) BUITONI Refrigerated All Natural Pesto with Basil (7 oz.)
- 1/4 cup olive oil
- 4 cups diced zucchini
- 1 cup chopped onion
- 2 cloves garlic, finely chopped
- 1 can (28-oz.) diced tomatoes in juice
- 1/3 cup thinly sliced fresh basil, (optional)
- 2/3 cup grated Parmesan cheese

HEAT oil in a large skillet. Add zucchini and onion; cook until zucchini is almost tender. Add garlic and tomatoes; reduce heat to low. Cook until juices evaporate.
ADD pesto to hot pasta; toss to coat. Add zucchini mixture; stir to combine. Season with salt and ground black pepper. Top with basil and cheese.

very tasty and simple
This dish offers a lot of flavor with very little effort. I highly recommend the Buitoni Pesto--it is one of the best I've ever tried. For some reason, serving fresh chiled pineapple chunks as side dish really brought out the flavor--so much that everyone in the family commented on how well the two go together. I'll definitely make it again.
Even my son and husband who don't like zucchini thought it was good. It was quick, easy, and full of flavor.
I enjoyed making this as much as my family enjoyed eating it. It was quick, simple, flavorful, and pleasing. I will be making this again!
Simple and Full Flavored
This recipe was full of flavor while being light at the same time. It made and elegant presentation and yet was simple enough that my 9 year old daughter was able to prepare it perfectly and without direct supervision.
This recipe is so delicious. Very simple to do. I added some marinated chicken strips that I cooked before, just to add a little extra. Mmmmm!
