Beautiful and delicious Linzer Bars are perfect for all occasions. You'll love the raspberry flavors in these festive bars. These are easy to make and ready in less than 1 hour. Serve warm or cooled.

Ingredients:

  • 1/3 cup finely chopped almonds
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1 pkg. (16.5 oz.) NESTLÉ® TOLL HOUSE® Refrigerated Sugar Cookie Bar Dough, broken into pieces
  • 1/2 cup seedless raspberry jam

Directions:

PREHEAT oven to 350° F. Grease 8-inch-square baking pan.

COMBINE nuts, flour and cinnamon in medium bowl. Add cookie dough; mix well. Reserve ½ cup cookie dough mixture. Press remaining mixture onto bottom of prepared baking pan. Spread jam over dough.

ROLL out reserved dough on lightly floured surface into 8 x 5-inch rectangle. Cut lengthwise into 10 strips. Lay half the strips over jam, about 1 inch apart. Lay remaining strips crosswise over the first strips.

BAKE for 25 to 30 minutes or until top is golden brown. Cool in pan on wire rack for 10 minutes. Serve warm or cool completely.

    Using cookie dough was a snap! This was a big hit. I used my old TRACING WHEEL - you know the tool we all used a hundred years ago in HOME ECONOMICS to trace patterns onto fabric? Well I scrubbed mine clean years ago (after only using it for fabric once or twice in 7th grade) and have used it to trim lattice for pies ever since. It works like a dream!!! Try it you will definitely be glad you did. It makes a perforated edge that you can pull apart and has an interesting edge to it. It is PERFECT for these bars too. For Christmas I will sprinkle some green colored sugar on top of the lattice cookie dough strips for seasonal color!

    Ever since I tried this recipe I keep 2 rolls of the refrigerated cookie dough and a jar of raspberry jam on hand. Its so easy to quickly make a 9x13 pan for unexpected company. I always sprinkle sliced almonds on top before baking and sprinkle with powdered sugar before slicing. Warm from the oven and impressive too!

    It needs a bit of lemon juice mixed in the jam filling to bring out the fruity taste. It also makes a more spectacular presentation if you brush the crust with egg wash before baking and sprinkle with sugar and ground nuts.

    I like recipes that can go together reasonably quickly. This one works great. I have also tried the bars with pecans instead of almonds and like the taste of that as well. Creating the lattice topping works better if you roll the dough and then return it to the refrigerator to chill--it makes the handling easier.
