Ingredients:

  • 1 package (40 oz.) STOUFFER'S Macaroni & Cheese, prepared according to package directions
  • 1 1/2 cups cooked, diced chicken or turkey
  • 1 cup canned Italian seasoned tomatoes, drained
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced onion

Directions:

PREHEAT broiler.

COMBINE macaroni and cheese, chicken, tomatoes, bell pepper and onion in 2-quart baking dish.

BROIL until top is golden brown.

    I was skeptical about this meal, as we usually don't like cooked tomato. It was relatively easy to prepare, and I bought the party-sized Mac & Cheese, so I only used half of the tray and saved the rest for dinner later in the week. Hubby was sick with the flu, but managed to grab seconds. The kids liked it alot too....they ate the rest for lunch the next day!

    got a little creative on this one I put a dusting of Mexican blend cheese on top before puttting dish in the oven also added Mushrooms in place of that nasty tomato.All in all a most tasty dish that leaves much room for your own creativity.

    I really liked this recipe. I did however omit the tomatos because they are not a family favorite. Before cooking I added some frozen peas and I also sprinkled the top with bread crumbs and my family loved it.

    Easy and Good!

    This was a quick yummy meal for my family. The browned edges tasted especially delicious. I season and sautted the chicken before added it to the mix. I also served with warm buttered french bread and ceaser salad. My son (2) and hubby loved it. A complete meal thats delicious any time but especially on those cold winters night. Really satisfying. Comfort food. I will make again!

    I had to change the recipe alittle because I didn't have all the ingredients. I used boxed mac and cheese and found canned tomatoes with the onions and peppers already in it. But these two little changes didn't change anything! I loved this meal and so did my boyfriend, it was super easy and took no time!!

    I made this last night for the Family (as it was Dad's Night to cook), instead of fast food. WOW!!! Easy to make. I used the Stouffer's Family size Mac that feeds 9. I used a whole pack of Chicken Breast, diced. This came out wonderful. I threw in the Bellpeppers afer it was all cooked, as the crispy bells gave it a really great texture. I use this site to plan my whole week in advance.

    I thought this was going to be really good, based on the other reviews. However, I found that the Macaroni did not taste good. I think that maybe it would taste better with homemade macaroni. My husband didn't think it was that bad. But then again he lived off frozen meals before we met. I may try it again with homemade mac. and cheese.

    This was both easy and delicious! I used a suggestion from a previous review and sauted onion, garlic and BACON BITS in a little olive oil while I cooked the macaroni. Add turkey to onion mixture, cook until no longer pink. Add macaroni & cheese and top with chopped tomato. Delish! Complete it with a side salad. I made this in under 30 min and my 6 yr old gobbled it up! Thank you very much for the recipe!!!

    My family hated this recipe. I didn't think it was too bad. I think you should soften the onions and peppers in the oil with the chicken. They were way too crunchy for my family, that is not that big on veggies. I thought it was okay. I gave the leftovers to my mom and her coworker the next day for lunch and they liked it a lot. I would say that if your family likes Mac and Cheese and veggies, they might like this. If not I would skip it.

    This may look a bit different from the original one, but I just made some small changes. First of all chopped onion is boiled in coconut oil till its brown.then I added pepper, salt and then the macaroni, chicken and the rest. In addition to this I also added noodles,a s my son does not like macaroni much. Surprisingly, my son finished his meal completely for the first time in his life. Altogether this was a different experience and the dish was yummy.

    I absolutely love this dish! Coming from an Italian household, I love Old World Cacciatore, but not the time and effort it takes to create such a hearty meal. With this dish, you get the best of both worlds with Macaroni & Cheese, and Cacciatore. However, my sister and I recently started the Atkins Nutritional Approach, and we're not supposed to have very many carbs in our diet...so, if there's anyone out there who is in the same boat I'm in, try this recipe with Controlled Carb Pasta (which is a little bit more expensive, but a healthier alternative), and your own cheese. I used Sharp and Medium Cheddar and PepperJack. It added a wonderful kick. I got 5 gold stars, so I pass it on to the dish!!! Goda il vostro alimento, ed il dio benedice...

    Wonderful and Easy!

    This was an excellent dinner but I made a few adjustments that put a little more flavor into an already wonderful recipe. I fried several strips of bacon in a skillet, removed bacon, sauteed some garlic in bacon grease and then added my chicken until browned. After I mixed all ingredients, I crumbled bacon and mixed it in with the dish. It gave a bit more pizzazz and I received rave reviews on it.

    Two additions: Prepare the chicken as if you were eating it separately. I seasoned it, added a little flour, and sauted in olive oil. Also, add Parmesan cheese to the top before baking.

    Everyone in my family loves macaroni and cheese, so I really looked forward to making this recipe. Since Italian tomatoes are pretty strong, and suit hearty pasta sauces best, I used only 1/2 cup of tomatoes; then added a bit of garlic powder, seasoning salt and fresh cracked pepper. Just before I put the casserole into the oven, I sprinkled some grated sharp cheddar cheese over the top (about a cup.) When it came out of the oven, it was hot, bubbly and delicious!

    Try this recipie with chicken, broccoli and pamento added for color, instead of the tomato and green pepper. Top with parmesean cheese before baking.

    I made this recipe for my family with great expectations. We all love macaroni and cheese, so I was sure this dish would be a winner. However, the tomatoes over-powered the other ingredients in this dish and we found it to be fairly bland. In all fairness, I had to omit the green pepper because of a family member who won't eat anything with green pepper in it. Maybe this dish is better prepared with the green pepper.
