Matzo Brei

Ingredients

2 large eggs
1/2 cup evaporated milk
1/4 cup finely chopped onion
Salt and ground pepper, to taste
4 matzos (6-inch square each)
1 to 2 tablespoons margarine or butter, divided
Sour cream or applesauce (optional)

 

Directions

BEAT eggs and evaporated milk in medium bowl. Add onions; mix well. Season with salt and black pepper. Crumble matzos into large pieces into colander. Run water through matzos until slightly absorbed. Press down on matzos to get rid of excess water. Add matzos to egg mixture; mix well.

MELT 1 tablespoon margarine in large, non-stick skillet over medium heat. Pour 1/4 cup matzo mixture onto hot skillet. Brown on one side, about 1 to 2 minutes. Turn and continue browning on other side. Repeat with remaining matzo mixture, using additional margarine, if necessary. Serve immediately. Top with sour cream or applesauce, if desired.

NOTE: For Sweet Matzo Brei, substitute 1 tablespoon honey and 1/2 teaspoon ground cinnamon for chopped onion and ground black pepper. Serve with Delicious Pumpkin Apple Butter (link to recipe) or maple syrup, if desired.

    I never used any kind of milk w/ my Matza Brie, and also use equal eggs to Matza. I soak my matza first, not just run water over it, this way u do not need milk. But I want to try it this way & see how it comes out. Interesting twist on a very old recipe. When my family likes it sweet, we use powdered sugar, cinnamon & fruit, syrup optional sort of like French toast---YUMMY!
