Mexicali Macaroni and Cheese

Ingredients

2 packages (12 ounces each) STOUFFER'S Macaroni & Cheese, defrosted*
1/2 cup (2 ounces) shredded cheddar cheese
1/2 cup frozen corn
1/3 cup mild salsa
3/4 cup crushed tortilla chips

 

Directions

PREHEAT oven to 400° F.

COMBINE macaroni and cheese, cheese, corn and salsa in medium bowl; spoon into 8-inch-square baking pan. Top with chips.

BAKE for 25 to 30 minutes or until bubbly around edges.

*DEFROST Macaroni and Cheese in microwave on MEDIUM (50%) power for 5 to 6 minutes.

    This dish is so good, I was already drooling while I was making it. I made it as a main dish, but it could easily be a side dish. I added extra salsa and corn. Thoroughly enjoyed it.

    An easy and delicious meal that my whole family loves! I get requests for this all the time. Serve with your favorite salsa, (doesn't have to be the recipe's kind) and you can adjust the level to your taste. For example, we like medium, but a friend of ours doesn't like spicy, so we used the mild kind. Also, put the chips on after baking so they are crunchier. You'll always come back for seconds!
