This Mexican Quiche takes all the best ingredients of a rich and creamy quiche and adds the essential elements of Mexican cooking: drop in Mexican cheese, diced green chiles and salsa prima.

Ingredients:

  • 1 (9-in.) unbaked frozen deep-dish pie shell, (4-cup volume)
  • 1 cup 4 cheese Mexican blend
  • 1 large green or red bell pepper, chopped
  • 1 can (4-oz.) ORTEGA Diced Green Chiles
  • 2 large green onions, sliced
  • 4 eggs, lightly beaten
  • 3/4 cup ORTEGA Salsa - Homestyle Recipe (Mild), mild
  • 3/4 cup NESTLÉ® CARNATION® Evaporated Milk

Directions:

Garnish suggestions: ORTEGA® Salsa Prima-Homestyle Mild, sour cream, sliced green onions, diced tomatoes

PREHEAT oven to 375°F.

SPRINKLE cheese, bell pepper, chiles and green onions onto bottom of pie shell. Combine eggs, salsa and evaporated milk in small bowl until blended. Pour into pie shell.

BAKE for 40 to 45 minutes or until knife inserted halfway between center and edge comes out clean. Cool on wire rack for 15 minutes. Garnish as desired.

NOTE: For a lower calorie version, substitute shredded light cheese and NESTLE® CARNATION® Evaporated Fat Free Milk.

    Good Special Occassion Breakfast Dish

    I take this to special occassion breakfast or brunch. It's always a favorite. I add cooked spicy crumbled breakfast sausage as the bottom layer. I also add sliced canned jalepenos. I use my favoriate Salsa since we don't care for the Ortega salsa. I sometimes add extra cheese or an extra egg. Let guests garnish with sour cream and salsa.

    I was very disappointed in this recipe. The texture was off, and it just didn't really taste that great. The flavor of the salsa was overpowering. My husband hated it, too. I will not be making this again.

    The Best and so easy!

    This was so easy to make and turned out so good that I have since shared the recipe with several friends. I left out the onion but it still had enough pizazz because of the salsa. Next time I might drain the salsa *slightly* and add a teaspoon of jalapenos for a little zip!

    Last year 12-2001 I prepared this dish for a Mexican food potluck. It was a hit. I have been invited to this potluck again and this Mexican quiche was requested. Try adding a little seasoned ground beef.

    Don't be afraid to experiment with this recipe a little. Add salt and pepper for sure. If you like it spicy, add some hot salsa or hot sauce. It tastes great.
