Ingredients:
1 large egg
1/2 cup orange juice
1/3 cup vegetable oil
1 jar (20 1/2 oz.) CROSSE & BLACKWELL Mincemeat
2 cups all-purpose flour
1/2 cup chopped pecans
1/3 cup granulated sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon baking soda
1 cup powdered sugar
1/4 teaspoon cinnamon
3 to 4 teaspoons orange juice
Directions:
PREHEAT oven to 400° F. Grease twelve ½-cup muffin cups.
FOR MUFFINS:
COMBINE egg, orange juice, and vegetable oil in large bowl. Stir in mincemeat. Combine flour, nuts, sugar, baking powder and cinnamon in medium bowl. Stir into mincemeat mixture until just combined. Divide batter among prepared muffin cups (cups will be very full).
BAKE for 20 to 22 minutes or until wooden pick inserted near center comes out clean. Turn muffins onto wire rack to cool. Cool for 10 minutes.
FOR GLAZE:
COMBINE powdered sugar and cinnamon in small bowl. Stir in enough orange juice to make drizzling consistency. Dip muffin tops into glaze. Allow glaze to set up. Serve muffins warm or at room temperature.
