I never thought of mixing candy in with the icecream before making the sandwiches...what a great idea! My niece and nephew helped me pick out what kind to put in. I bet it would be good with peanut butter too.

These are easy to make and so much fun when the kids help. I used to make these for my kids when they were little. We would bake the cookies and then they would use there favorite ice cream and them roll them in special treats. We would put them in the freezer and have them as an after dinner treat.

I served these to my daycare kids and they loved them. I found it easiest to make them inside a hamburger patty press. Clean up was easy!

    birthday party ice cream sandwiches

    annette hathaway from SCHENECTADY, NY

I had my neices daughters birthday party at my house and instead of the standard cake and ice cream, we let the kids make their own ice cram sandwiches. The kids all loved this, they were a huge success and easy to make.

    a little messy

    Amber Corbin from MANASSAS, VA

I found that if you save a tin or two and remove both ends, leaving just the ring, or buy a biscuit cutter ring, this makes assembly sooo much easier....and neater. Set the ring on a piece of plastic and place the first cookie in it, scoop and pack in the ice cream and top with second cookie, remove the ring and wrap with the plastic wrap you placed under the initial cookie. Makes preparing these so much more enjoyable.
