Ingredients:

  • 3 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 cup raisins, sweetened dried cranberries, or chopped nuts (optional)
  • 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin

Directions:

COMBINE all ingredients, except pumpkin, in large bowl. Pour into 1-quart resealable plastic bag; seal. Wrap muffin mix and can of pumpkin in fabric; tie with ribbon or twine.

RECIPE TO ATTACH:
Pour muffin mix into large bowl. Cut in 1/2 cup vegetable shortening with pastry blender until mixture is fine. Add 1 cup LIBBY'S 100% PURE PUMPKIN, 1 cup milk and 2 large eggs; mix until just moistened. Spoon into greased or paper-lined mini-muffin pans, filling 2/3 full. Bake in preheated 400ºF oven for 15 minutes; remove to wire racks. Sprinkle with powdered sugar, if desired. Makes about 60 mini muffins.

    Bland--lacks moisture and sweetness that you get with pumpkin bread. For the second batch, I added and extra 1/2 cup of brown sugar, which made it better, but still not what I wanted.

    Every thing was good with these mini muffins. My husband is in the military and he brought them to work. Everyone at his worked just loved them. I added pumpkin seeds and a cream cheese mix in the middle (for a nice little extra), so moist and enjoyable.

    I used this recipe for my daughter's snack day contribution at school. Because of earlier comments I used buttermilk instead of regular milk to help with moistness. Great taste, not too sweet, put in pumpkin shaped muffin molds and dusted with powdered sugar. They were a hit!!

    This recipe is so easy to mix up and have on the shelf ready to go for those last minute baking "emergencies". The muffins are just the best - they're moist and taste better when a day old, although I have a hard time keeping them around that long. I have fun switching around the extras. Sometimes it's raisins, sometimes it's walnuts or dried cranberries or shelled pumpkin seeds; which are a nice touch. I also add 1/4 teaspoon powdered ginger for a little extra zip.

    This recipe is good but,if you want to save a step(or 2) instead of just using the pumpkin, try substituting the pumpkin pie mix, it has the spices in it. I fine that just as good and a bit quicker.

    I just made this recipe to bake right then and there so I could see how they were. Very very tasty. I would and think I will this Christmas, give as a gift, but I think I'd cut the recipe in half. It sure made a lot, and I even used some regular sized muffin tins. The only problem with cutting it in half is I don't think you can find a smaller can of pumpkin. All in all though, the muffins were very very tasty!! Thanks!!

    I used apple sauce instead of vegetable shortening and used fresh cranberries instead of dried cranberries. The muffins turned out sooooo good. I made both mini and regualr size muffins. These freeze well too. They also make a great breakfast when served with cream cheese.

    The Fall is finally here and that makes me want to eat Pumpkin bakery. I happen to find this great recipe and couldnt wait to get started. I am a newly wed and my kitchen ingredients are not exactly up to date. I just have the basic baking ingredients to work with. This can be difficult with some recipes because they call for so many unique ingredients. Luckily I had most of what was needed on hand. I didnt have the mini cupcake pans so I made the large muffins and also I used a loaf pan. They turned out Great! I am looking forward to giving the mix as a gift.

    Vegan Alternative

    This is an excellent recipe. I had to make two batches of them. My son and I are vegans, so I made a few alterations. Ground flax seeds and water for an egg replacement, stevia powder for the sugar, and soy milk instead of cows milk. They turned out amazing!!!! I made a batch for his preschool and everyone loved them. My son ate them for breakfast, snack and as part of his lunch. I added an extra 1/4 cup of pumpkin in the second batch (add 1-2 minutes to baking time, for a stronger pumpkin flavor.
