Ingredients:

  • 1 box (3.4 oz.) vanilla instant pudding and pie filling mix
  • 1/4 teaspoon pumpkin pie spice or ground cinnamon
  • 2/3 cup (5 fl.-oz. can) NESTLÉ® CARNATION® Evaporated Fat Free Milk
  • 1 cup LIBBY'S® 100% Pure Pumpkin
  • 1 1/2 cups thawed fat-free frozen whipped topping

Directions:

COMBINE pudding mix and pie spice in medium bowl. With whisk, add evaporated milk; mix until well blended. Add pumpkin; mix well. Gently fold whipped topping into pudding mixture. Spoon into serving dishes. Top with additional whipped topping and pie spice, if desired. Serve immediately or cover and refrigerate.

Makes about six 1/2-cup servings

    I tried the pumpkin mousse recipe last week. I was a little disappointed. The mousse was very runny. The only thing I can think of that I did wrong was use the cooking pudding and pie filling instead of instant which the recipe did not indicate. It had a wonderful taste though. The next time I try it I will use instant pudding.

    Instant vs. Stovetop! Yikes!

    The recipe does NOT call for instant pudding mix, and it should! I was able to save my batch by heating the pudding mix, spice (which I doubled), evaporated milk and about half of the pumpkin, stirring constantly, until the mixture was cooked through. Then I added the rest of the pumpkin to help it cool down faster. I still had to wait about fifteen minutes until the mixture had cooled enough to fold in the whipped topping, and I had to refrigerate it to set it. The result was really tasty, though!!! I will try it again with instant pudding mix and see which one comes out better, but who knows, the "mistake" might turn out to be a blessing in disguise!

    Mmmmm is right. We loved it. I needed something tasty and light. Loved the flavor not over powering of pumpkin. I only have regular evaporated milk and everything else. It was still light and Mmmmm Mmmmm GOOD! I think this will be close at hand at all pumpkin ceaving times. Husband really liked it and around here it's always a plus.
