Nutty Pumpkin Waffles are chock full of nuts and a must-bake for the holidays. Moist and light, they're fun and tasty for breakfast drenched with homemade Pumpkin Maple sauce, and perfect for brunch or lunch too!

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs, separated
  • 1 3/4 cups milk
  • 1/2 cup LIBBY'S® 100% Pure Pumpkin
  • 2 tablespoons butter or margarine, melted
  • 3/4 cup chopped nuts
  • 1 recipe pumpkin maple sauce, (recipe follows)

Directions:

COMBINE flour, sugar, cornstarch, baking powder, cinnamon, salt, ginger and nutmeg in large bowl. Combine egg yolks, milk and pumpkin in medium bowl; mix well. Add to flour mixture. Stir in butter. Beat egg whites in small mixer bowl until soft peaks form. Gently fold into pumpkin mixture.

PREHEAT waffle iron according to manufacturer's directions. Depending on size of waffle iron, pour 1/2 cup to 1 1/2 cups batter onto hot iron. Generously sprinkle with nuts. Bake for 4 to 5 minutes or until steaming stops. Repeat with remaining batter and nuts. Serve with Pumpkin Maple Sauce.

NOTE: This recipe makes 8 waffles of 7-inch diameter.

FOR PUMPKIN MAPLE SAUCE
HEAT
1 cup maple syrup, 3/4 cup LIBBY'S® 100% Pure Pumpkin and 1/4 teaspoon ground cinnamon in small saucepan until warm.

    I don't usually like pumpkin food, but these were wonderful, I couldn't even taste the pumpkin! My 8yr old stepdaughter loves waffles and pumpkin, so needless to say she LOVED them! They were light and fluffy on the inside, but wonderfully crispy on the outside....I don't generally eat syrup so I didn't try it......

    I do not understand why this is rated as CHALLENGING. It really was not difficult and the taste was worth the list of ingredients to make them. We had gone to a pumpkin festival years ago, and had had the "SPECIALTY" pumpkin waffles. These were even better than those! ANd , the pumpkin syrup was a really nice surprise that I never would have thought to do!

    For the health concious, I forgot my melted butter in the microwave. (I was in a hurry to make the waffles, they sounded so good.) I decided to use one cup whole wheat flour. Everyone loved these waffles. My three year old who only takes a few bites of regular waffles ate half a waffle and asked for more.I was looking for a recipe to use pumpkin besides pie, cookies, or soup and found none. Then I just stumbled across this one. This recipe should be on the label of Libby's pumpkin.

    Just had to say thanks for this recipe. Made these for Sunday breakfast and they were gobbled right up! To avoid sticking in your waffle maker, spray with a non-stick vegetable spray. I do and it works just fine.
