Oatmeal Raisinets Pancakes

Ingredients

1 1/2 cups all-purpose flour
1/2 cup old-fashioned oats
2 tablespoons light brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 large eggs
2 cups buttermilk
1/4 cup butter, melted and cooled
1 teaspoon vanilla extract
1/2 cup NESTLÉ RAISINETS Milk or Dark Chocolate-Covered Raisins
Nonstick cooking spray
Maple syrup

 

Directions

WHISK together flour, oats, brown sugar, baking powder, baking soda, cinnamon and salt in a large bowl. Set aside. Whisk together eggs, buttermilk, butter and vanilla extract in small bowl. Pour buttermilk mixture over flour mixture; mix until the ingredients are incorporated (batter will be thick and slightly lumpy). Fold in Raisinets.

HEAT griddle or pan over medium heat and spray with nonstick cooking spray. Pour 1/4 cup batter onto hot griddle; cook until bubbles begin to pop. Turn and continue cooking for 1 to 2 minutes or until pancakes are golden brown. Repeat with remaining batter. Serve warm with maple syrup.
