Old-Fashioned Pumpkin Nut Loaf Bread is great for gift giving, too! Evaporated milk and nuts add great flavors to this easy-to-make recipe.
- 2 cups all-purpose flour
- 2 teaspoons pumpkin pie spice
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 can (15 ounces) LIBBY'S® 100% Pure Pumpkin
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup NESTLÉ® CARNATION® Evaporated Fat Free Milk
- 1 large egg
- 1 large egg white
- 1 tablespoon vegetable oil
- 1/4 cup chopped nuts
PREHEAT oven to 350° F. Grease 9 x 5-inch loaf pan.
COMBINE flour, pumpkin pie spice, baking powder, salt and baking soda in medium bowl. Blend pumpkin, granulated sugar, brown sugar, evaporated milk, egg, egg white and oil in large mixer bowl. Add flour mixture; mix just until moistened. Pour into prepared loaf pan; sprinkle with nuts.
BAKE for 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes; remove to wire rack to cool completely.

A moist treat
This recipe turned out quite good but...just a small but...I would definitely mix in some more nuts(instead of just putting nuts on the top).
Did I screw up?
This didn't work for me. It tasted fine, however it was gummy & didn't have the texture of a bread. I don't mind a bread being moist, but this was too moist. After reading other reviews, I probably goofed somewhere. My husband won't eat it...I hate wasting food; so guess it's all mine.
Nicely Old Fashioned
Sometimes pumpkin bread just has too much sweetness to it, but this one was just right. The spices in this recipe mingle well and it made hit at the office for Christmas gifts! I did mini loaves. Everyone said it reminded them of Grandma.
Moist and flavorful!
This was actually my very first time making bread! I'm not sure if all breads are supposed to be this moist and delicious, I'm thinking probably not :-) Even though I used the blender a little bit too much (which resulted in a dense bread) this was still VERY VERY good and I will be making this again and again! I did add some nutmeg and cloves based on other reviews. I also used chopped pecans, and I may use a different nut or a smaller cut next time.

Great Low Fat Pumpkin Bread
Multiplied by 6 and made 6 loaves(hard to manage, would do no more than 4 next time). By mistake, I FORGOT to add the oil!!...Bread was still very moist. Will make again, add a little more spice and I will leave the oil out. Doesn't need it.
Great to have in the freezer for emergencies: drop in guests, hostess gifts, visiting shut-in's, breakfast treats...

This bread was very good but I would suggest adding some extra spice. The second time I made it I added some extra cinnamon and nutmeg it was delicious!!
I am no superstar baker, and this was very easy to make and came out just DELICIOUS! I even replaced the tablespoon of oil with a tablespoon of applesauce, and it came out very moist and perfect. Anyone can make this and make it well; I recommend this recipe for sure!

This is a very easy recipe. I suggest toasting the nuts and adding them in the bread as well. We are nut lovers in our house.
Old Fashioned Pumpkin Loaf
Ok I love pumpkin and wanted some bread, so I made this. I would make it again, even though it was good, I would jump over hoops for it. But would make it again when craving pumpkin and bread. And make sure you push nuts down on top before baking as they kept falling off.
I just tweak it a little.
I've made it three times and enjoy it more with 1/4 teaspoon additional pumpkin spice and 1/4 cup more pumpkin. I think it just needed a little more moisture and a bit more flavor.
This recipe has become a family favourite...double the recipe to ensure you have enough for seconds!
I used more nuts and folded them into the batter. This is a very good recipe!

My family and I love this loaf, the first time I made it we finished the same day. It has a dense texture and is not overly sweet. I thought it might be a little dry because of the small amount of oil, but it isn't. I will definitely be making this again.

This bread is absolutely dee-licious!! I was surprised at how moist this bread is with such a small amount of oil. I put the chopped nuts (increased to 1/2 cup) in the batter along with 1/2 cup of goldens.
