Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup butter (1 stick), softened
  • 1 cup LIBBY'S® 100% Pure Pumpkin
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Glaze (recipe follows)

Directions:

PREHEAT oven to 350° F. Grease baking sheets.

COMBINE flour, baking soda, baking powder, cinnamon, nutmeg and salt in medium bowl. Beat sugar and butter in large mixer bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth. Gradually beat in flour mixture. Drop by rounded tablespoon onto prepared baking sheets.

BAKE for 15 to 18 minutes or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle Glaze over cookies.

FOR GLAZE:
COMBINE
2 cups sifted powdered sugar, 3 tablespoons milk, 1 tablespoon melted butter and 1 teaspoon vanilla extract in small bowl until smooth.

    I made these for a class Halloween party. I knew the teacher was allergic to nutmeg, so I omitted it easily. Even without it, the cookies were wonderful. The kids loved them. My husband and son had no problem eating the ones that weren't sent to school. Definitely a recipe I intend to keep.

    I made these for my dad, who likes the pumpkin cookies available at the grocery store bakery. He liked these cookies just as much as the store-bought cookies. The recipe yields a lot of cookies (I hate recipes that only yield ~2 doz) and the cookies stayed moist for days (which was all the longer they lasted). The pumpkin taste is not overpowering nor is it too weak. I advise you to use the glaze because the cookie seems a little too chewy without it. The glaze recipe is excellent and it came in handy for a variety other cookies I bake, too.

    I tried this recipe for Thanksgiving and it was a hit. So I decided to make pumpkin cookies again for Christmas. I couldn't find this recipe & found another recipe online. Oh it was nothing like this recipe. I'm going to throw away this batch and try all over again with this recipe where I know it will be so delicious.

    The cookie w/o the glaze is dry and just not good. When you add the glaze the cookie gets MUCH better. I also tried using eggnog instead of milk and that made them even better. But I was disappointed in the flavor of the cookie itself.

    My daughter was invited to a friends house for a party and was asked to bring a food item to share and I was against a store bought treat. We didn't have much time to come up with something and not many ingredients in the cupboard, but I always have spices. I found this recipe for Old Fashioned Soft Pumpkin Cookies on Libby's website and decided to give it a try. Cookies are great finger foods for sharing especially for teenagers. I am so happy I did because when my daughter told me "the cookies were a hit with all of her friends and they raved about them" it was worth trying the recipe. I make them all the time now. If you love moist cookie centers and a little crispness on the edges, these are perfect. The taste of pumpkin is just right and not overwhelming.     A Taste from my Childhood

    I had some fresh pureed pumpkin and needed to use it up, so I found this recipe tonight and my children and I baked them. Yummy! They taste just like the pumpkin cookies I used to bake as a child. I did add some raisins to the last few cookies (I like raisins, some of my children do not) and they turned out perfect. This recipe is definitely a keeper and we'll be making them often.

    We made these yesterday The flavor is yummy, and they are nice and soft. I used half brown sugar instead of all white, and half wheat flour. We frosted some with cream cheese frosting and dusted some with powdered sugar. For a little more spice I might add some ginger or cloves next time.

    My 2-year-old daughter asked to make cookies today. I remembered we had pumpkin on hand and looked for a cookie recipe to use it. It was very easy even for her to help mix, etc. They are yummy! Also, we were out of white flour and often use whole wheat flour in an effort to make healthier food choices. I was concerned that the cookies might not be as good, but they are delicious and I don't believe anyone would ever notice that it is whole wheat flour.

    This cookie recipe is simple, cheap and Ohhhhh so good! The icing is a little tricky so you may have to add a touch more milk so you can drizzle but other than that this recipe is dead on delicious!!! I made them and then tasted a fresh cookie from the oven and I am hooked. I can tinker with this recipe and add chocolate chips or pecans and caramel glaze for a change but why mess with a good thing??? We will make this over and over-I am sure of it!!! Thanks VBB!

    I'm made these twice in the past 2 weeks. They are one of the easiest cookies to make and they are loved by all-even the doubters. I use white whole wheat flour and just throw all the ingredients together into a mixing bowl and mix thoroughly. Nothing easier than that and they are good plain or with the glaze or with packaged icing. You can't go wrong with these cookies.
