Mac & Cheese is a standard favorite, but we have mixed it up with this Penne Pasta with Sun-dried Tomato Cream Sauce recipe. We’ve made traditional cheese sauce with Carnation Evaporated Lowfat 2% Milk and changed-up the cheese and pasta while adding sun-dried tomatoes for a luscious Mac & Cheese inspired dish.

Ingredients:

  • 2 cups (8 oz.) dry penne pasta
  • 8 sun-dried tomatoes, chopped (about 1/3 cup)
  • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Lowfat 2% Milk
  • 2 cups (8-oz. pkg.) shredded Italian-style four-cheese blend
  • 1 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper

Directions:

PREPARE pasta according to package directions, adding sun-dried tomatoes to boiling pasta water for last two minutes of cooking time; drain.

MEANWHILE, COMBINE evaporated milk, cheese, basil, garlic powder and pepper in medium saucepan. Cook over medium-low heat, stirring occasionally, until cheese is melted. Remove from heat.

ADD pasta and sun-dried tomatoes to cheese sauce; stir until combined.

    I made this last night and with a side of greenbeans it was fantastic. The flavors mixed so well and the creamsause was amazing even before I added the sun-dried tomatos. I will definatley make this again and I am looking foreword to the left overs.

    After reading previous reviews I only used 1/2 a can of evaporated milk & 1/2 can drained diced tomatoes instead of sun dried. It was delicious & there weren't any leftovers in my house.

    Beyond Mac N Cheese

    This is so not your grandma's mac n cheese! This is beyond delicious.....so creamy, so full of flavor. The only that I changed was to add grilled chicken to make this a one dish meal. My company was amazed and said they felt like they were in a fancy Italian restaurant. Don't buy bottled Alfredo sauce - this is quick, easy and tastes MUCH better!

    Yes, I played with it a little too. The sauce is a little watery, but it helps to reheat the next day. Since I don't like sun-dried tomatoes, I just broiled sliced tomatoes and used that instead. I also added some frozen peas and my homemade meatballs! And, fresh basil is always better if you have some handy. After the add-ins, it turned out really good!

    Ok, so I also tweaked the recipe a little. I always eat whole wheat pasta, so I made it with that, and I also added chicken and mushrooms. That way it made a heartier meal. It was much better that way. I also made a little extra pasta because I read that the sauce was too much for only 8 oz. Overall, this was simple and good. The only reason I didn't give it 5 stars was because I added some ingredients that were not listed.

    Made a few changes

    This was good as it was written, but after making some changes it was outstanding. Instead of sundried tomatoes, I used Italian diced tomatoes, then added julienned fresh baby spinach, freshly ground black peppercorns and cooked salad shrimp. It was a lot of sauce, so I increased the amount of pasta to a whole 16 oz box and used whole wheat pasta to make it healthier. NOW that was tasty!!!

    Very easy to make. I made a double recipe and the sauce was too much compared to the pasta. I would cook 24 oz of pasta (vs. 16 oz) for a double recipe. Would definitely be great with chicken.

    this is good if you need to make something that is fast after work for your family.I used canned tomatoes that are chopped and I drained them well and I also added grilled chicken breast that I chopped and it was pretty yummy!!My hubby has to have meat or he gets grumpey!!!

    Instead of using expensive sun-dried tomatoes, use a 15 oz. can of drained tomatoes with peppers/onions and add a little thinly sliced celery. Combine the cheese and penne, milk and drained tomatoes and other vegetables if you like. Top with buttered bread crumbs and 1/2 c. more romano or parmesean cheese and bake until bubbly.

    I wasn't overly impressed because it was basically mac n' cheese. I should have paid more attention before I decided to make it (I had all the ingredients on hand). If I make again, I may sprinkle with cheese and bread crumbs and stick in the oven for a bit.

    I love this recipe. I substituted whole wheat pasta, fat free Carnation, and reduced fat cheese and it was still great. The sun-dried tomatoes give it just the right kick. I also like mushrooms in it and tried frozen corn with great results.
