Ingredients:

  • CRUST
  • 1 cup (6 oz.) NESTLÉ® TOLL HOUSE® Premier White Morsels
  • 1/4 cup (1/2 stick) butter, softened
  • 3 cups flaked oat cereal with blueberries, slightly crushed
  • FILLING
  • 1 pkg. (3.4 oz.) lemon pudding and pie filling mix (not instant)
  • 1/2 cup granulated sugar
  • 2 large egg yolks, lightly beaten
  • 1 3/4 cups water
  • 1 cup (6 oz.) NESTLÉ® TOLL HOUSE® Premier White Morsels
  • 1 pkg. (8 oz.) cream cheese, softened
  • 1 container (8 oz.) frozen whipped topping, thawed
  • 1 cup blueberry preserves

Directions:

FOR CRUST:
GREASE
10-inch pie plate.

PLACE morsels and butter in uncovered, medium microwave-safe bowl. Microwave on MEDIUM-HIGH (70%) power for 1 minute; STIR. Morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted. Stir in cereal until coated. Press onto bottom and up sides of prepared pie plate.

FOR FILLING:
COMBINE
pudding mix, sugar, egg yolks and water in medium, heavy-duty saucepan. Cook over medium heat, stirring constantly, until mixture comes just to a boil. Boil for 1 minute. Remove from heat. Add morsels; stir until melted. Refrigerate for 1 hour or until cool.

BEAT cream cheese in large mixer bowl until smooth. Beat in pudding mixture. Fold in whipped topping. Spoon into crust. Refrigerate for 1 hour or until filling is set.

SPOON blueberry preserves over pie just before serving.

    We have tried different toppings and our favorite is strawberry. The lemon and strawberry put a good zing to this sweet dessert and makes a very delicious dessert. We liked all the toppings we tried, even a layer of pumpkin on top with a dash of cinnamon and allspice was great. We love changin good deserts around and having new ones at different times. Especially when there is a special occasion for a certain one in the family. A good grade, a special deed done for someone deserves something special and they get to pick what they want. I think we have used this receipe 5 times with 5 different toppings. Thanks for making our dinners very special for some special member of our family. You make it so easy and so great.

    I made this the other day and had a bit of a problem. I cannot find pudding mix in the 3.4 oz. size! I can get 2.9 and 4.3 oz. but not the other. I used the larger oz. pkg. and did not add all but that seems a waste. It turned out great though!!!

    I made this with a graham cracker crust like the suggestion in a previous review had stated and added 1/4 cup of the melted nestle white chocolate to the graham cracker crust. It held the crust together great. Also I had a hard time finding lemon pudding & pie filling in the 3.4 oz size that wasn't instant. I could only find the instant lemon pie and pudding filling in that size which it indicates that you cannot use. I ended up buying 2 boxes and adding a little more to the receipe. No big deal, just thought to point that out. Everyone loved it and asked for the recipe!! I have made it several times!! Excellent!!
