Ingredients:

1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
1 cup chopped pecans
1 pkg. (8 oz.) cream cheese, cut up
1 jar (12 oz.) pineapple preserves
Fresh pineapple wedges and mint leaves (optional)

Directions:

PLACE evaporated milk, pecans, cream cheese and preserves in blender container; cover. Blend until smooth. Place 1/2 cup mixture into each of 8 dessert cups or ramekins. Refrigerate for 2 hours or until chilled. Garnish with pineapple wedges and mint leaves, if desired.

I had a dinner at my house on Sunday. Of course if was a big Sunday meal. Everytime I have a big dinner everyone is so full after dinner it is hard for them to eat a traditional heavy dessert. I had the traditional desserts of cakes and pies for those who wanted them or wanted to take them home, but I also had the Pineapple Pecan cups. They were so much lighter than the other desserts. Everyone just raved over them. Some even had a couple and stated they weren't overly full. Thanks for the recipe!!!!

Really easy to make. Put a layer of cool-whip in the bottom of the cup, froze it first and then ladeled the rest on top. Added a dollop of Cool-whip on the top. Kids loved it.
