Puffy Pumpkin Pancakes
Puffy Pumpkin Pancakes are easy to make and are beautifully golden in color. They have a fun "puffed-up" appearance with the pumpkin adding a hint of flavor and moistness. Pumpkin adds just the right touch to make these pancakes a new family favorite.
- 2 cups complete pancake mix (such as AUNT JEMIMA® Buttermilk Complete)
- 1 1/2 cups water
- 2/3 cup LIBBY'S® 100% Pure Pumpkin
- Nonstick cooking spray
- Lite pancake syrup, if desired

SPRAY griddle or large skillet with nonstick spray. Heat over medium heat. Pour 1/4 cup batter onto hot griddle; cook until batter bubbles begin to burst. Turn and continue cooking for 1 to 2 minutes or until golden. Repeat with remaining batter. Serve with syrup.
Makes 6 servings, about 12 pancakes total

They are thick, and cook great!
I used fresh pumpkin and a little bit of cinnamon. These were fantastic.
i love pumpkin and i love pancakes soo i thought these should be pretty good. They were not i did not like them at all they did not even really taste like pumpkin. i would not make these again.
Light as a feather
These pancakes are so light! Sometimes my pancakes are not as light as I would like them to be but these were fantastic, and the flavor the pumpkin added was WOW! Another recipe that I will make again and again.
