Puffy Pumpkin Pancakes are easy to make and are beautifully golden in color. They have a fun "puffed-up" appearance with the pumpkin adding a hint of flavor and moistness. Pumpkin adds just the right touch to make these pancakes a new family favorite.

Ingredients:

  • 2 cups complete pancake mix (such as AUNT JEMIMA® Buttermilk Complete)
  • 1 1/2 cups water
  • 2/3 cup LIBBY'S® 100% Pure Pumpkin 15 oz.
  • Nonstick cooking spray
  • Lite pancake syrup, if desired

Directions:

COMBINE pancake mix, water and pumpkin in medium bowl. Stir just until moistened. Batter may be lumpy.

SPRAY griddle or large skillet with nonstick spray. Heat over medium heat. Pour 1/4 cup batter onto hot griddle; cook until batter bubbles begin to burst. Turn and continue cooking for 1 to 2 minutes or until golden. Repeat with remaining batter. Serve with syrup.

Makes 6 servings, about 12 pancakes total

    Sunday is waffle day in my family. So we tried this recipe with waffles. We did play with the amount of spice and liked the last one with the most spice added. We enjoyed these just with some butter , they didn't need syrup. Great for people watching the diet.

    I tried them one as a pancake and it was ok, I expected more pumpkin taste. I cooked the rest as Waffles, they didn't cook trhough (maybe it's time for a new waffle iron). Hope you have better sucess with these.

    These are excellent....that being said, and being a "tweaker"...lol...I added 1/2 cup of raisens to the batter and when they were done, I sprinkled these great pancakes with just a small amount of a cinnamon/sugar mixture and THEN the maple syrup.I always know that a recipe is good if my grandsons eat until their arms get tired....and they did

    We just finished breakfast and they were fantastic. We like peanut butter on our pancakes of any kind and they were great! Don't knock the peanut butter until you try it. We sprinkled a little cinnamon on top with maple syrup mmmmmm mmmmm good. Next time I will try the pumpkin pie spice, I'm sure is just as good, just have to try for myself.     I added a pinch or two each of ground cinnamon, nutmeg, and cloves, and found these delectable pancakes satisfied a raging crowd of breakfast-seeking teenagers. For a special occasional treat, I might top them with a dollop of whipped cream, as well as syrup (the pancakes, not the teenagers, LOL!). Very good.
