Ingredients:

  • MUFFINS
  • 2 1/2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups LIBBY'S® 100% Pure Pumpkin
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 2 cups apples, peeled, cored and finely chopped
  • STREUSEL TOPPING
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter or magarine

Directions:

PREHEAT oven to 350º F. Grease or paper-line 24 muffin cups.

FOR MUFFINS:
COMBINE
flour, sugar, pumpkin pie spice, baking soda and salt in large bowl. Combine pumpkin, eggs and oil in medium bowl; mix well. Stir into flour mixture just until moistened. Stir in apples. Spoon batter into prepared muffin cups, filling three-fourths full.

FOR STREUSEL TOPPING:
COMBINE
sugar, flour and cinnamon in medium bowl. Cut in butter with pastry blender or two knives until mixture is crumbly. Sprinkle over muffin batter.

BAKE for 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool in pans for 5 minutes; remove to wire racks to cool slightly.

    Excellent recipe, I have been making this recipe for over 20yrs for family and friends. My daughter took it to my granddaughers kindigarden class. All the students loved them.     This recipe is awesome! These muffins are absolutely delicious. The apples and pumpkin complement each other so well. I did use some whole wheat pastry flour in the recipe, but you can't even tell. I also made jumbo muffins instead of the regular size. I shared one with a coworker and she could not stop raving over them, so I would say this recipe is a keeper. They are perfect for breakfast or a snack--just the perfect fall treat.

    I have been making these muffins since I found the recipe on the can. I lost the recipe and am glad I could find it again. My kids have always loved these muffins. they would sing the name over and over. Since the muffins take awhile to make, I have made the mix and froze it in a large zip lock bag so that I could make the muffins on Sunday morning. Just snip the corner of the bag and pipe into the muffin cups. Mix the struesel topping the night before and you have a great breakfast.

    This is a great recipe by itself but I changed it slightly. To the struesel topping I added nuts(pecans and almonds) and instead of dicing the apples, I shredded them. I took the muffins to work last weekend and they were a hit. This recipe is very moist and has a great taste also is a great use for all those extra cans of pumpkin you bought over the holidays.
