Easy-to-make Pumpkin Banana Nut Bread gets an extra flavor twist with the addition of pumpkin.

Ingredients:

  • 4 cups all-purpose flour
  • 4 teaspoons baking powder
  • 4 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin 15 oz.
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup (2 medium) very ripe bananas, mashed
  • 3/4 cup vegetable oil
  • 1 cup chopped walnuts

Directions:

PREHEAT oven to 350º F. Grease and flour two 9 x 5-inch loaf pans.

COMBINE flour, baking powder, cinnamon, ginger, baking soda and salt in medium bowl. Combine pumpkin, eggs, granulated sugar, brown sugar, bananas and vegetable oil in large mixer bowl; beat until smooth. Gradually beat in flour mixture; stir in nuts. Spoon into prepared loaf pans.

BAKE for 55 to 60 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.

    This bread was easy to make. I added an extra can of pumpkin, 1 cup of miniature chocolate chips and 2 extra bananas. I made the bread into mini muffins, mini loaves, and regular size muffins.     I cooked this last year for Thanksgiving. It was a big hit. I brought some to school and my friends loved. Everybody wanted me to bake them some. This Thanksgiving I baked 4 loaves. I put 2 for my family out on the table with some butter. It was gone in a couple minutes. I took the last 2 loaves over to my friend's house. They loved it. Remember, I am 13 years old and can bake this easily. The best bread I have ever had!

    I decided to try this recipe when I saw it had 16 pages of good reviews and like the others I love this bread. I made it up as muffins so it would be easy to take to work. I am going to try the suggestion of adding chocolate chips and vanilla. Also thought about substituting half of the oil for applesauce to reduce the fat. Will definitely make it again and try it with those changes.

    I made this bread to use up two ripe bananas that were sitting in the kitchen...at first I was disappointed because it just tasted like regular banana bread. However, a couple of days later I tasted another piece and the pumpkin flavor really stood out! So I guess it just took awhile for the flavors to mellow. I also added a handful of raisins to the batter to add some extra flavor, and they complemented nicely with the banana/walnut/pumpkin mix.

    Pumpkin Banana Nut Bread

    This has become a family tradition. The bananas make the bread so moist, while the pumpkin gives it a rich flavor. I make at least 10 loaves a holiday season to give as gifts because it is so easy to do and tastes like I spent hours in the kitchen. I add some pecans that are chopped fine, on top of the bread. If you don't have walnuts, pecans tastes awesome in this recipe.

    Good Bread for Coffee Klatch

    I used 1/2 Cup oil because 3/4 Cup seemed like so much. I try and keep the oil to a minimum to keep it healthier. Used Pumpkin Pie Spice instead of Ginger, not being a ginger fan. Added golden raisins too. Made one loaf with and one without nuts. It is a solid quick bread and great along with coffee or tea. Yummy!! Will make again but may add some applesauce to make more moist.

    Love this recipe 2 of my favorite flavors for bread. Made 2 double recipes and added nuts & choc chips to some, some just nuts, some plain. Not a crumb was left and was told that some tasted banana, others the pumpkin, either way up to my standards (I take all new recipes I try to work. Now and then one is not a hit.........This is and I have made it about 3 times for different friends.)

    i always liked the idea of pumpkin and banana together. i didnt have two loaf pans so i made one loaf, and the xtra was for muffins. i totally forgot to put the nuts in though so it was just pumpkin banana. it would have been better with the nuts.

    The bread is great. Easy to put together. I love having another way to use old bananas. It's very moist, and it goes together fast and easy. I agree with the other baker that raisins are great to add. I also added vanilla. When some people eat it they taste the pumpkin and others taste the banana first.

    I made this this evening and it's already half gone. I only made one loaf so i cut everything in half. I used 1/2 a teaspoon ginger instead of 1 and I added 1 teaspoon vanilla. I also substituted the walnuts with chocolate chips. It was really good and moist. This recipe is definitely a keeper.

    this bread was a real big hit with the guys at work! the kids at home were impressed, too. I read the other reviews before I started baking, so I used 5 tsp pumpkin pie spice instead of the ginger and cinnamon and added the tsp of vanilla. This is a super easy success, and will be made many, many more times in the future!
