Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup OCEAN SPRAY® CRAISINS® Original Dried Cranberries
  • 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin

Directions:

COMBINE all ingredients, except pumpkin, in large bowl. Pour into 1-quart resealable plastic bag. Place in fabric bag. Place bread mix and can of pumpkin in 9 x 5-inch loaf pan.

RECIPE TO ATTACH:
Beat together 3/4 cup LIBBY'S 100% Pure Pumpkin, 1/2 cup vegetable oil, 2 large eggs and 1/4 cup orange juice or water in large mixer bowl until blended. Add contents of bag; stir until just moistened. Spoon batter into greased and floured 9 x 5-inch loaf pan. Bake in preheated 350° F. oven for 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pan for 10 minutes; remove to wire rack to cool completely.

Recipe makes one loaf.

This is so good!! I replaced 2/3 of the sugar with Splenda and my husband didn't know the difference. I'm diabetic, so I have to watch the sugar carbs. My father-in-law, also diabetic, loves the low to no sugar treats I make for him, this one included.

    The orange juice ads a nice extra layer of flavor to this moist, delicious pumpkin bread variation. I am going to try it using my "muffin top" pan the next time and might try substituting orange craisins for the regular flavor craisins and add some toasted pecans. My husband loved this quick bread. Suggest making a double batch to use the entire can of pumpkin.

    I made this bread for 2 different occasions...serving it for a friend get together in the morning and the other for Thanksgiving. Everyone enjoyed it and ate more than one helping. It was excellent! I did make a change. I cut the sugar amount in half and added more vanilla. No one missed the sugar. I also used organic Cane Sugar in place of refined sugar.

Our adult teachers prepared the mixes in quart plastic bags ahead of time, all but the sugar and cranberries. The children then measured and added these ingredients to the mix bags, stapled on the recipe, placed in white sacks they had decorated and made cards for their teachers.

    Give this to a college kid especially if they have a toaster oven or a dorm kitchen. It is a great gift to say, treat yourself to a home baked treat. Put the ingredients in a gallon size plastic bag which can serve as their mixing bowl. Just mix all together in the bag, squeeze into bread pan and throw the bag away, no bowl to clean up.

    Very Good Pumpkin Cranberry Bread

    This bread if very good. I love pumpkin bread anyway, but never thought of making it with dried cranberries. I am actually testing out jar recipes for Christmas presents on looks in jar and taste when completed, and I will definitely give this one out. The layers I did were bottom: sugar+pumpkin pie spice, middle: cranberries, top: flour+baking soda+ salt or you could do cranberries on top so the receiver could take them out. I would not recommend it though. The dried cranberries go very well with the pumpkin and they plump up nice. How much for fall-like can you get?!
