Pumpkin biscuits are perfect for breakfast, brunch or even to serve with an early supper. Topped with Pumpkin Maple Sauce they're perfect companions for stews and soups.

Ingredients:

  • 2 1/2 cups all-purpose baking mix
  • 1/3 cup dry NESTLÉ® CARNATION® Instant Nonfat Dry Milk
  • 1/4 cup packed brown sugar
  • 1 1/4 teaspoons pumpkin pie spice
  • 3/4 cup LIBBY'S® 100% Pure Pumpkin
  • 1 tablespoon water
  • Pumpkin Maple Sauce (recipe follows)

Directions:

PREHEAT oven to 425° F.

COMBINE baking mix, dry milk, sugar and pumpkin pie spice in medium bowl. Stir in pumpkin and water just until moistened.

KNEAD dough 10 times on lightly floured surface. Roll dough to 1/2-inch thickness; cut into 12 biscuits. Place biscuits on ungreased baking sheet about 2 inches apart.

BAKE for 8 to 10 minutes or until golden brown. Spoon sauce over warm biscuits.

FOR PUMPKIN MAPLE SAUCE
HEAT
1 cup maple syrup, 1 cup LIBBY'S 100% Pure Pumpkin and 1/4 teaspoon ground cinnamon in small saucepan until warm.

    I made these for my son who is very picky. He helped me to make them and it was so easy for him to help. We didn't make the sauce, just added some butter when done. We also didn't roll out the dough. We tore it off and made shapes with our hands and he found it to be very fun and has asked when we are making them again.

    I found the biscuits to have a pleasant spicy aroma and taste, but the pumpkin flavor was not pronounced, if you ate them alone. If you used the maple-pumpkin sauce as a dip, the biscuits had a much more pronounced and sweet pumpkin taste, but were too messy with the sauce poured on them. The biscuits were excellent, with or without sauce.

    I made these today to go with dinner and they were very good. We ate them right out of the oven without the maple sauce or butter. All of my children asked me to make them again for tomorrows dinner!! They were pretty easy to make except I had to really flour the board before rolling because batter was alittle sticky but, they came out of the oven very moist. Would make these again and again!!

    I made these over the weekend, I split them and put cooked egg and country ham on them for sandwitches. The boy's took them to the lake for a snack while fishing. They didn't catch much, but loved the sandwitches. Yes, this is a play on words being October and all!

    I was disappointed in this recipe, but it may have been my own fault. I doubled the batch and used both regular biscuit mix and a whole wheat variety. They did not raise and were very hard. My sister thought they looked like dog buscuits! The dough was very dry and crumbly and I had to add more water to get it to stick together. All in all, not a very satisfying baking experience.

    Worth the time to make!

    Measure out the pumpkin for the sauce them empty the rest into the bisquit mixture. I used real maple syrup;not pancake syrup. Wonderful. My picky 80 year old Mother put it on her chicken as well. Will definitely make again.

    This recipe is wonderful! These biscuits are so yummy, even the dough is tempting. Besides that, they retain their shape so well when baking that you can use seasonal cookie cutters to make these into a seasonal treat with any meal (I used a cross and a lamb for mine, and they came out in the exact same shape they were cut into). Good job to whoever came up with this recipe. By the way, I have three kids under four who ate these, and they liked them so much they ate two!

    These biscuits were great. I first made them at my daughter's apartment while visiting her. Her roommates and friends were dubious about tasting "pumpkin?" biscuits. However, they quickly disappeared. I was then requested to make them every day I was there. The sauce was great,but, the hot biscuits with butter were just as good. Thanks for the great recipe.
