A combination of pumpkin, evaporated milk, cinnamon and ice cream makes up this scrumptious Pumpkin Nog drink. Great for holiday entertaining.

Ingredients:

  • 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
  • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 1 pint vanilla ice cream
  • 2 to 3 tablespoons rum (optional)
  • Ground nutmeg

Directions:

PLACE pumpkin, evaporated milk, honey and cinnamon in blender container; cover. Blend until smooth. Add ice cream and rum. Blend until smooth. Serve immediately. Sprinkle with nutmeg.

As someone who has recently been put on a liquids-only diet for health reasons, this nog is remarkably satisfying. It tastes like pie in a glass. I substituted fat-free vanilla yogurt for the ice cream and fat-free evaporated milk because of my dietary restrictions. This allows me to feel indulgent and have a taste of the season.

    I got together with my mom and we had a baking day for the holidays and we tried this and it was very GOOD,we added an extra scoop of ice cream in the bottom of the cup! We did leave out the rum! It would be great as a pumpkin milk shake! Very Good!

    We had a WELCOME TO FALL party last night. 7 couples got together and everyone contributed something to the menu. I decided to make this. Okay, we added a bit more rum than specified, but it worked! I put a cinnamon stick in each and the presentation was good too. When I pulled the blender out AND the LIBBYS pumpkin, ice cream, honey, CARNATIONS, rum etc. no one could figure out just what it was that I was making. The results went over in a BIG way though! The "NOG" is very creamy, delicious and easy to make! The TASTE of Autumn . . . . .

    A Change From The Ordinary

    This rich and creamy nog is a delightful and easy to prepare change from ordinary egg-nog. I substituted rum extract for the rum , and found that almond extract also works well. It marries two traditional holiday flavors (creamy pumpkin pie and egg nog) and you get a healthy boost of fiber and beta-carotene from the addition of pumpkin! Perfect to quickly satisfy a craving for both, it became an instant holiday hit with my family.
