A combination of pumpkin, evaporated milk, cinnamon and ice cream makes up this scrumptious Pumpkin Nog drink. Great for holiday entertaining.
- 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
- 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
- 2 tablespoons honey
- 1 teaspoon ground cinnamon
- 1 pint vanilla ice cream
- 2 to 3 tablespoons rum (optional)
- Ground nutmeg
PLACE pumpkin, evaporated milk, honey and cinnamon in blender container; cover. Blend until smooth. Add ice cream and rum. Blend until smooth. Serve immediately. Sprinkle with nutmeg.

A Change From The Ordinary
This rich and creamy nog is a delightful and easy to prepare change from ordinary egg-nog. I substituted rum extract for the rum , and found that almond extract also works well. It marries two traditional holiday flavors (creamy pumpkin pie and egg nog) and you get a healthy boost of fiber and beta-carotene from the addition of pumpkin! Perfect to quickly satisfy a craving for both, it became an instant holiday hit with my family.
