Ingredients:

1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
2 tablespoons honey
1 teaspoon ground cinnamon
1 pint vanilla ice cream
2 to 3 tablespoons rum (optional)
Ground nutmeg

Directions:

PLACE pumpkin, evaporated milk, honey and cinnamon in blender container; cover. Blend until smooth. Add ice cream and rum. Blend until smooth. Serve immediately. Sprinkle with nutmeg.

I got together with my mom and we had a baking day for the holidays and we tried this and it was very GOOD,we added an extra scoop of ice cream in the bottom of the cup! We did leave out the rum! It would be great as a pumpkin milk shake! Very Good!

We skipped the rum, added whip cream and sprinkled nutmeg on top of the whip cream. It makes a fantastic dessert with a lot of nutritional value. WE all loved it!!

As someone who has recently been put on a liquids-only diet for health reasons, this nog is remarkably satisfying. It tastes like pie in a glass. I substituted fat-free vanilla yogurt for the ice cream and fat-free evaporated milk because of my dietary restrictions. This allows me to feel indulgent and have a taste of the season.

I put a cinnamon stick in each and the presentation was good too. This rich and creamy nog is a delightful and easy to prepare change from ordinary egg-nog. I substituted rum extract for the rum , and found that almond extract also works well. It marries two traditional holiday flavors (creamy pumpkin pie and egg nog) and you get a healthy boost of fiber and beta-carotene from the addition of pumpkin!
