These moist, pumpkin-flavored cookies are drizzled with an orange glaze for a tasty finishing touch.

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) butter or margarine, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 can (15 ounces) LIBBY'S® 100% Pure Pumpkin
  • 1 large egg
  • 2 tablespoons orange juice
  • 1 teaspoon grated orange peel
  • 1/2 cup chopped nuts (optional)
  • Orange glaze (recipe follows)

Directions:

PREHEAT oven to 375° F.

COMBINE flour, baking soda and salt in medium bowl. Combine butter, granulated sugar and brown sugar in large mixer bowl; beat until creamy. Add pumpkin, egg, orange juice and orange peel; beat until combined. Gradually add flour mixture; beat until combined. Stir in nuts. Drop dough by rounded teaspoon onto ungreased baking sheets.

BAKE for 12 to 14 minutes or until edges are set. Remove to wire racks to cool completely. Spread each cookie with about 1/2 teaspoon Orange Glaze.

FOR ORANGE GLAZE:
COMBINE
1 1/2 cups sifted powdered sugar, 2 to 3 tablespoons orange juice and 1/2 teaspoon grated orange peel in medium bowl until smooth.

    I have two young boys and both of them loved these cookies! They were soft enough and with out the frosting that my 17 month old would devour them in no time. The only complaint I had was because of the orange juice in the frosting I did not know if I should refrigerate them or not and the glaze got really wet when refrigerated. But overall a really good cookie that I know we will make many more times.

    When I first made these incredible cookies, I used a recipe I found on the back of the Libby's Pumpkin can. I didn't know what to expect---then WOW!!! And that was the response from others who tried them~~ I somehow lost the recipe after that, upset I'd never be able to make them again!....5 years later, it 'dawns' on me (finally!) I could probably locate the recipe online! I AM grateful---plan to make them this weekend for a church harvest party, and already know about the WOW's to come! So glad to find it again!

    Great Cookie Recipe!!

    I made these once out of desperation, looking for ANYTHING other than chocolate chip cookies for a change. They are wonderful! My husband and son, the chocolate chip fans, really loved them and these are requested almost as often as their favorite. They are also incredibly simple and have a great look to them. Try brushing the icing on with a pastry brush two or three times (allowing the icing to dry in between brushings). It gives them a nice sheen.
