Pumpkin Raisinets Cookies offer the moistness of pumpkin pie with the chocolatey sweetness of chocolate-covered raisins. Try these for a Halloween party or a children's dessert at Thanksgiving.
- 2 1/4 cups all-purpose flour
- 1 1/2 teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) butter or margarine, softened
- 1 cup granulated sugar
- 1 can (15 ounces) LIBBY'S® 100% Pure Pumpkin
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups (12.5 ounces) NESTLÉ RAISINETS Milk Chocolate-Covered Raisins
- 1 cup chopped walnuts
- Vanilla Glaze (recipe follows)
PREHEAT oven to 375° F. Grease baking sheets.
COMBINE flour, pumpkin pie spice, baking powder, baking soda and salt in medium bowl. Beat butter and sugar in large mixer bowl until creamy. Beat in pumpkin, eggs and vanilla extract. Gradually beat in flour mixture. Stir in Raisinets and nuts. Drop by rounded tablespoon onto prepared baking sheets.
BAKE for 15 to 20 minutes or until edges are lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle or spread with Vanilla Glaze.
FOR VANILLA GLAZE:
COMBINE 1 cup powdered sugar, 1 to 1 1/2 tablespoons milk and 1/2 teaspoon vanilla extract in small bowl; mix well.

What a great idea. I love raisins in my pumpkin cookies, I can't believe I didn't think of this myself.

Pumpkin raisinet cookies
I made these cookies at Christmas time to include in my cooky tray gifts. The flavor is great! The cookies however, were a little soft. I prefer a crisp type of cooky for the trays.
I baked these the first time as the recipe states, very moist and tasty. The second time I made them with plain raisins for my husband who does not like chocolate. Even good without the chocolate. Different cookie for the holiday besides the "staples"!
Very unique cookie!!
I loved this cookie. The raisinets are so yummy in them. I used pecans in them also. I also added more spice and 1 tbsp. molasses and 1 tbsp. of honey. These are very cakelike, I like the cakey texture. Do not skip the icing it makes the cookie!!

What an amazing blend of flavors and spices! Chocolate, raisins, nuts, pumpkin, cinnamon, etc. You've got to try these; they're moist, cake-like and each bite is a burst of a different flavor sensation!
MOIST is the word
These cookies were great. Very moist (even after sitting out all night while the icing dried). I added twice the amount of pumpkin pie spice, yet it was not too spicy (for us at least). This recipe makes a lot of cookies if make them a bit smaller then specified.

These were great, moist and soft. I made one change to my version - I added twice the amount of pumpkin pie spice. Everyone just raved about them, even after they found out they had pumpkin in them.
These cookies are SO good and remind me of happy holidays because of the delicious ingredients such as the pumpkin but are really good any time of year! All I can say is "Yum!"
Try it you might like it
I took these to work yesterday and seen a lot of wrinkled noses when I told them there was pumpkin in it. After they tried them, they found out they were moist, and the whole batch disappeared.
