Pumpkin, Spice & Everything Nice Muffins are easy to make using a spice cake mix. Pumpkin adds moisture without adding fat and helps make these muffins light, tender and springy. Enjoy them in the morning, after school, or even as a night-time snack.

  • 1 pkg. (18.25 oz.) spice or carrot cake mix
  • 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
  • 6 tablespoons egg substitute or 3 large egg whites
  • 1/3 cup water
  • 2/3 cup raisins


PREHEAT oven to 350º F. Grease or paper-line 24 muffin cups.

COMBINE cake mix, pumpkin, egg substitute and water in large mixer bowl until moistened. Beat on low speed for 30 seconds; scrape bowl. Beat on medium speed for 2 minutes. Stir in raisins. Spoon batter into prepared muffin cups, filling 2/3 full.

BAKE for 18 to 22 minutes or until wooden pick inserted in centers comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely. Store muffins in covered container.

Makes 2 dozen muffins

    Yummy. Like a lot of others, I added pumpkin pie spices and cinnamon. Good texture, and so moist. Batter was plenty for 24 good sized muffins. What a simple prep for such delicious muffins. Will surely make again.

    I made these for a bake sale at my work, and while it isn't until tomorrow, I'm really anticipating a huge hit. I set aside one six-muffin tray for the apartment, and I'm pretty sure I'm going to be making more soon. My only complaint is that the taste is a little bland-- maybe some brown sugar would give it that extra, little something. I'm also considering substituting dried cranberries for raisins in a batch. This recipe is really easy, though, and there are so many alterations that can be made to it, to suit your personal preference. I love it!

    I made this recipe last night and it was really easy to make. Not too many ingredients, which is perfect for a busy Mom. I tried them with raisins, with choc chips and plain. I like them BEST with raisins. Just seemed to fit. I also made them as cookies, not muffins, and it worked out really good. Baked them for 18 min., and they were perfect! I would recommend these "cookies" ! Good & Easy! I think next time I might try adding nuts too, with the raisins.

    Makes An Excellent Cake!

    I took this to a reunion Sunday as a cake and got rave reviews! Everyone was wanting the recipe. I used 3 whole eggs, however, and baked in a 9" x 13" pan. Then I frosted with cream cheese frosting. They could also be baked as bars, I believe. But no matter what...they are delicious! The biggest problem in this area is finding the pumpkin to bake with. We are told that it isn't available until Fall!!

    I cheated and poured the entire mix into a cake pan. It needed more baking time, but the toothpick trick works. I omitted the raisins. This was so unbelievable good without icing. And for 100 calories - a great snack!

    try adding apple juice or cider, or orange zest and juice; try soaking the dried fruit (apricots would be great!) in the juice before using both. Top each muffin with sanding sugar for a finished look.

I made them over the past long weekend and we ate them while watching the Marathon on Patriots' Day yesterday. My family loved them and just to let you know, I did substitute semi sweet morsels for the raisins as my guys do not like raisins. The combination was really tasty.

    I am on weight watchers and I am always trying to find recipes that I can tweek or best of all need no changes. Well these muffins fit the bill. Thought they may end up dry since the batter is thick. Not even close, they are wonderful, and moist. For you WW people out there these muffins are 2 points per muffin. They would be perfect with cream cheese icing, but we can't have everything :)
