Ingredients:

1 pkg. (5 1/10 oz.) vanilla instant pudding and pie filling mix
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Lowfat 2% Milk
1 can (15 oz) LIBBY'S® 100% Pure Pumpkin
1 teaspoon pumpkin pie spice
Fat free whipped topping (optional)

Directions:

BEAT pudding mix and evaporated milk according to package directions in large bowl; refrigerate for 5 minutes. Add pumpkin and pumpkin pie spice; mix well. Spoon into dessert dishes. Refrigerate for 10 minutes or until ready to serve. Top with whipped topping, if desired.

Delicious! I used the recipe builder to calculate WW points. If you use evaporated whole milk it's 2 points per serving (the recipe makes 7 servings). If you use low-fat or skim (evaporated, of course) milk, the points value is just 1 point per serving. I mixed some with prepared rice and gave it to my 1 year-old grandson for lunch. Yum!

I made this recipe for thanskgiving 2007 and it was fabulous. It was pumpkin pie in a bowl only without all the pie crust and calories! I used carnation lowfat evaporated milk,sugar-free vanilla pudding, milk,splenda. I added some some nutmeg and cinnamon, chopped up some chrystallized candy ginger and put in the refrigerator the night before Thanksgiving. I topped it with cool whip and it was delicious. You could add shaved nestle chocolate to it for a even more rich decadent taste. The easiest, quickest and really rich dessert I have made yet!

I have been making this recipe for years. To make it more holiday festive I have made it into a layered dessert. I grind up molasses cookies and then layer 1/2 of them then 1/2 the pudding then 1/2 a carton of Cool Whip then repeat and finish with sprinkling a few of the ground cookies on top. If possible I use all sugar free ingredients and it still taste wonderful! Looks really pretty too!
