I have an entire folder of pumpkin recipes because I LOVE anything pumpkin. Well, time flew and the holidays passed me by. I decided that I didn't need a holiday to make this 'pumpkin pudding'!! I made it this past week and I will have to make it more often. I usually share what I make with my neighbors. None of this made it out the door! It was so good that my boyfriend and I ate it! It is so smooth. It was a good thing that I didn't tell anyone I made it.

    pumpkin pudding?

My sister served this during thanksgiving proclaiming that it was pumpkin mousse. And imagine my surprise when my first bite was of a creamy pumpkin pudding. For those of you, like me who like a mousse like finish once in a while, try folding your container of low fat whipped topping after it is all put together, at the end and after it has been in the fridge a bit to cool back down.

    Virginia Braddy from Hobgood, NC

As my family and I love anything with pumpkin, I was anxious but wary to try this recipe. It just didn't sound good and it seemed to call for much too much pumpkin. I made it any way and followed the directions to the T. I found it to be very easy to make and quite good. I was surprised and thrilled as were my family!

Mary Montgomery from MC DERMOTT, OH

While working in home care many of the elderly diabetics wished they could have some pumpkin pie for the holidays. I substituted sugar-free pudding and used fat free milk. Everyone was surprisingly pleased with the results. They got to enjoy their holiday favorite and still stay within their diets. They loved it and it is so easy to make.

Delicious! I used the recipe builder to calculate WW points. If you use evaporated whole milk it's 2 points per serving (the recipe makes 7 servings). If you use low-fat or skim (evaporated, of course) milk, the points value is just 1 point per serving. I mixed some with prepared rice and gave it to my 1 year-old grandson for lunch. Yum!

    Karen Wofford from SPARTANBURG, SC

I made this recipe for thanskgiving 2007 and it was fabulous. It was pumpkin pie in a bowl only without all the pie crust and calories! I used carnation lowfat evaporated milk,sugar-free vanilla pudding, milk, splenda. I added some some nutmeg and cinnamon, chopped up some chrystallized candy ginger and put in the refrigerator the night before Thanksgiving. I topped it with cool whip and it was delicious. You could add shaved nestle chocolate to it for a even more rich decadent taste. The easiest, quickest and really rich dessert I have made yet!

I have been making this recipe for years. To make it more holiday festive I have made it into a layered dessert. I grind up molasses cookies and then layer 1/2 of them then 1/2 the pudding then 1/2 a carton of Cool Whip then repeat and finish with sprinkling a few of the ground cookies on top. If possible I use all sugar free ingredients and it still taste wonderful! Looks really pretty too!
