These Raisinets Oatmeal Bars are a great treat to bring hiking or camping for an instant energy boost.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup packed brown sugar
  • 3/4 cup (1 1/2 sticks) butter or margarine, softened
  • 1 1/2 teaspoons vanilla extract
  • 1 large egg
  • 2 1/4 cups (14 ounces) NESTLÉ RAISINETS Milk Chocolate-Covered Raisins
  • 1 3/4 cups quick or old-fashioned oats, divided

Directions:

PREHEAT oven to 350° F. Grease 13 x 9-inch baking pan.

COMBINE flour, baking soda, cinnamon and salt in small bowl. Beat sugar, butter and vanilla extract in large mixer bowl until creamy. Beat in egg; gradually beat in flour mixture. Stir in Raisinets and 1 ½ cups oats. Spread into prepared baking pan. Sprinkle with remaining oats.

BAKE for 18 to 20 minutes or until golden brown. Cool completely in pan on wire rack. Cut into bars.

Wow! Great flavor. The Raisin Oatmeal bars were a big hit. They lasted a day and a half in my house. I did not use the raisinets. I simply added lots of raisins. The bars turned out like a dry crumbly cookie. The next time I make them I will try to find a way to make them a little more moist and chewy.

    My son loves these homemade nutritional bars. I didn't have any raisinets, but used golden raisins, and about a quarter cup of peanut butter, and drizzled chocolate syrup on top for a decorative touch after they were out of the oven. A quick, tasty treat or as a breakfast bar!

    I was looking for something that my son in law might enjoy on the way to the health club. Raisinets Oatmeal Bars filled the bill. Easy to prepare, easy to carry and so delicious. I did read the reviews before I tried this recipe and reduced the amount of butter and Raisinetsby half. I also reduced the brown sugar by a scant quarter of a cup. They were sweet enough for his taste but not enough to drive his thirst. I think with the reduced amount of butter, Raisinets and brown sugar that these bars would make great lunch box treats.

    After reading the other comments on this recipe, I followed some of their instructions and added what I already had on hand in my pantry. I used a second egg and 1 cup chocolate chips and 3/4 cup of shredded coconut in place of the raisinets. The result was a wonderfully cookie-ish bar! This is a delightful recipe that I will certainly make again!

    I brought a batch of these to a potluck last night and they literally flew off the plate! I had lots of requests for the recipe. I tweaked it slightly by using 2 eggs, adding 3/4 cups of chopped nuts and then sprinkling 1/4 cup of chopped nuts on top instead of the oats.

    These are good. I've used self-rising flour instead of regular flour. A couple tsp. of brewed coffee gives it a boost in flavor. Fresh orange rind tastes good in these bars as well! A little applesauce can be added instead of the coffee.

    For a slightly differest twist, I added an extra egg ( seemed a little dry ), decreased the cinnamon to 1/2 tsp., added 1/2 tsp. allspice and substituted 1/2 c. dried cranberries, 1/2 c. vanilla chips & 1/4 c. pecan chips for the raisinets ( didn't have enough ). These were very moist, delicious and a big hit at my office - definitely a keeper!
