We took traditional scalloped potatoes and made them extra tasty in this potato recipe with a velvety cheese sauce made from Carnation Evaporated Lowfat 2% Milk, plus lowfat cheese and turkey bacon. These potatoes are so rich and creamy you will never miss the fat!
- 6 slices turkey bacon, cooked and chopped, divided
- 2 to 2 1/2 pounds (about 6 medium) potatoes, unpeeled and thinly sliced
- 3 tablespoons butter or margarine
- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Lowfat 2% Milk
- 1 cup water
- 2 cups (8-oz. pkg.) shredded 2% cheddar cheese, divided
- 2 green onions, sliced
PLACE potatoes in large saucepan. Cover with water; bring to a boil. Cook over medium-high heat for 8 to 10 minutes or until just fork tender; drain.
MEANWHILE, HEAT butter in medium saucepan over medium heat. Stir in flour, salt and pepper. Gradually stir in evaporated milk, water and 1/3 cup bacon. Cook for about 8 to 10 minutes, stirring constantly, until mixture comes to a boil. Remove from heat. Stir in 1 1/2 cups cheese and green onion.
LAYER half of potatoes in ungreased 3-quart microwave-safe dish. Pour half of sauce over potatoes. Top with remaining potatoes and sauce. Top with remaining cheese and bacon. Microwave uncovered on HIGH (100%) power for 2 to 3 minutes or until cheese is melted.

I made this using only have the bacon and also baked it in the oven, I didn't notice prior to assembeling it that it needed to go in the microwave, nor would I have felt comfortable cooking it that way either. Tasted great and was nice and bubbly!

This is indeed easy and quick. The taste was great-but I must admit I used regular bacon. I will do this again and more than once.I agree it could use just a little more seasoning.
Cheddar Bacon Scalloped Potatoes
These were incredible! I am not a huge onion lover so I just omitted them and added extra bacon and cheese. Even my picky 12 year old loved them. They go great with steak and veggies. Since these were super simple to make I can make them on short notice which is always a bonus. These would even be good for breakfast!

I loved this, did not have green onions so substituted onions sliced thin.
My family loved this almost too much. I cook low carb 99.9% of the time, but I splurged tonight. My family said they wanted this once a week.. :) The only thing I did different was use regular bacon and pepper jack instead of cheddar. yummy

I made the scalloped potatoes over the weekend to go with Pork Chops. I liked them, however, I thought it could have used a little more seasoning. I definitly will make again as it was very good (it also tasted better the next day when I ate leftovers for lunch).
These potatoes were delicious! We eat alot of potatoes in our family and this is one we will deffinately make again! it was quick and easy and satisfied everyone.

Creamy Bacon Cheddar Scalloped Potatoes
These were yummy probably because of the carnation's milk. I loved them and never knew to boil the potatoes first before they get layered.I added thinly sliced white onions to my sauce at the end before it boiled. This a definate keeper recipe....THANKS

I made these for supper last evening and they were delicious. However, I used regular bacon not turkey bacon. The whole family loved them.
I WAS LOOKING FOR A SCALLOPED POTATO RECIPE AND FOUND THIS ONE. IT IS SOOOO GOOD AND I WILL BE MAKING THIS AGAIN AND AGAIN. THIS WOULD BE EXCELLENT FOR A POTLUCK MEAL.
