Utterly smooth and creamy, this chocolate mousse is a 'sensible' delight made with fat-free evaporated milk.

Ingredients:

  • 1 envelope (7 grams) unflavored gelatin
  • 1/4 cup cold water
  • 1 tablespoon * SPLENDA® Sugar Blend for Baking
  • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Fat Free Milk
  • 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
  • 1 tablespoon vanilla extract

Directions:

SPRINKLE gelatin over water in a medium saucepan; let stand for 1 minute. Stir over low heat until gelatin is dissolved; stir in SPLENDA® Sugar Blend for Baking. Stir in evaporated milk. Continue stirring over medium heat until milk is steaming hot (do not boil).

POUR into blender container; add morsels and vanilla extract. Cover; blend on low speed until smooth. Pour into small mixer bowl. Refrigerate, stirring occasionally, until mixture mounds from a spoon.

BEAT on high speed for 1 to 2 minutes or until thick and light in color. Spoon into serving dishes; refrigerate until ready to serve.

* NOTE: May substitute SPLENDA® Sugar Blend for Baking with 2 tablespoons granulated sugar.

When I made this for myself I remembered that, so I had to make it for some family as well to see what they thought.     This pudding was very good. I used butterscotch chips instead of chocolate. I also used a food processor instead of a blender. Everything turned out well. The taste is very creamer like others said. I'm sure that a person could use any kind of baking chip :chocolate, white, mint, ect for different types of pudding. I will try different kinds of chips to taste different flavors. Will make many times.

    I made this mousse, but used white chocolate chips. Boy was it sweet! In order to cut the sweetness, I used the recipe from this site for making whipped topping from evaporated milk, I just left out the sugar and vanilla. That helped. I used the whole thing to fill cream puffs. They got great reviews.

    I made this recipe, according to the directions. When it said to pour the hot milk into the blender, add the chocolate chips and blend, I did. Unfortunely it blew the top off.     I tried this for our Christmas Celebration. We have a few family members that are watching their caloric intake. I thought that it was extremely rich. I had to eat a lot of whipped cream with it.     I was debating about trying this recipe or the one with the heavy whipping cream and decided well, maybe I didn't need all of those 3000 fat calories in the heavy whipping cream one. This tastes AWESOME! It is a little thicker and heavier than real mousse, but still very very good. The kids loved it. My advice is that make it the day before because it takes a while to set up before you can whip it and it tastes better when it is refrigerated overnight.

    Surprisingly Good!
